Prime Rib with Au Jus

rib roast, approx. 1 rib thickness per person
salt
pepper

Prime rib is very easy to make. First thing is go to the store and buy a rib roast. You can ask the butcher for it, if it is not out on display. Buy it with the rib in. Generally rib roast is sliced between the ribs. One rib worth will be enough for two people. So for two people ask for one rib, or for four people, ask for two ribs worth, etc.
Store in the refridgerator until ready to use, but you shouldn't leave it there more than a few days.
When you are ready to make the prime rib, pre-heat the oven to 325 degrees. In a small bowl mix about one tablespoon of salt, with about a half tablespoon of coarse ground black pepper (out of a peppergrinder). Take the salt/pepper mixture, and rub all over the rib roast. When the oven comes to temperature, place the seasoned rib roast on a roaster pan with rack. Bake until center of meat reaches 135 degrees. I recommend using a digital oven thermometer with a remote probe. Remove from oven.
Slice along the rib(s) to remove them from the roast. Slice the roast crossways into the number of prime ribs you want. Serve with Au Jus.
