- I think this a good product, it does take the science out of keeping a servicable blade... but I don't think it does a great job in combination with Global knives. I would not state it outright dulls them, but it does not restore the original utter sharp edge. Personally, I think the Wusthoff santoku sharpener does a better job of restoring the Global knife edge - but the Wusthoff has the drawback it wears out after some months of heavy use. This one stays around longer, but the cost is a slightly duller, "un-Global" sharpness.
I think it is best suited for other knives, not the high end, expensive Global knives. I guess they struck a marketing agreement or something for now, but while I own this product, and use it for other knives, I will not use it for my Global knives. It's either the stone or the Wusthoff.
- Definitely does great on sharpening the Globals. Barely any effort, seems fool-proof. Doesn't restore the blade completely, but much faster and easier than a stone and a ceramic honer (which I've dropped and broken 3 in the past 8 years or so). I tried it with other knives and gave up after a while, seems to take a lot more strokes with minimal improvement.
- After emailing several places, I found this is the correct sharpener for my Global Chef's knife. I was concerned about keeping the edge at the same angle as it was originally. The clear plastic tray cover lifts off easily so water can be added to the tray. Simply roll the knife through several times and the edge is back to original condition. I recommend this sharpener to keep your knife like new.
- Well, I purchased this product at the same time I ordered the Global knife since it seemed to be recommended. It's just ok. Nothing to rave about. In fact, I like my little fish-shaped one I got from Home Depot for just $10 much better.
- This is the perfect sharpening device for people who own Global knives. It's extremely easy to use. You fill it with water, run the knife through the coarse dial a few times (making sure not to apply too much pressure to the knife), then run it through the fine dial a few times. Next thing you know, you have a knife that is good as new. My Global knives have gone from dull and giving me a lot of trouble cutting through vegetables to being able to just set the knife on top of a vegetable and let gravity do its work to cut through. All it took was a use of the minosharp in between.

- Have had this sharpener for 18 months. I sharpen the kitchen knives about once a month. This sharpener does a good job, it's fast and easy to use, and has not given any problems. What more can be said?
- This gizmo sounded like a great item to have so I decided to take the plunge and buy one. I was very disappointed. After sharpening one very good knife, I noticed a lot of etching along the blade of the knife - not nice! I cut a tomato with ease, but the next job was a piece of raw meat - I could have gotten further with a butter knife. Maybe it's great if you don't have a steel (most good knives do not need to be sharpened very often, just steeled), but I would prefer to stick with the old method. When one spends $200-$400 for a knife, that etching of which I spoke earlier is not nice. It might be your cup of tea but it left me tepid.
- I have to say that the sharpener is probably only as good as the knives I am trying to sharpen.I thought the diamnod hone would be the best , and it may be if one has a decent set of knives..All in all it took a lot of passes to sharpen knives..Sooo", I'd have to say that the Chef's Choice would be a good buy price wise, ability etc..
Sooo", now I guess I need to get a really good set of harden steel knives or something..I would recommend this sharpener.Any sharpener is not going to do the job right if you're using reallly cheap flimsy knives.."Make sure you have a set of good knives 'FIRST'..
- This is the second Chef's Choice sharpener I've purchased for myself. The first one lasted more than ten years. I've also purchased this as a gift for two of my my grown children who also love it.
It works great and is easy to use. Takes only a couple of minutes and no sweat to sharpen a knife.
- This product was actually given as a gift. I gave this to my grandmother. She loves it and says it works well and it was easy to understand what to do. She is so gald to have sharp knifes again.

- This is a great item that every home should have for well spent money. I hated sharpening knives but this is so easy to use. Now all of my knives are sharp at my house!
- This little sharpener works great. However, it is for a quick sharpening. The edge doesn't last as long as I would like it too. So if you don't mind sharpening every other week then you should be ok. It's small and extremely portable.
- to have a sharp collection of knives again for $6 or $7 is great. Many of my knives were unusable before sharpening and now are very sharp. Easy to use.
- I immediately sharpened my years old folding blade with this and was quite pleased with the results. The size of the sharpener isn't really pocket sized. The dimensions are 2 1/4" x 2 3/4" x 7/8" In layman's terms, it's 2/3 the size of my BlackBerry or roughly equivalent to the size of my Staedtler pencil sharpener. Kind of clunky to call it "pocket" sized, but effective and worth the seven bucks. I bought two.
- There is no way to properly hold this sharpener and it is very easy to cut yourself when using.

- My husband saw this on television and wanted to try it. He was a mid-level restaurant chef in his younger years and definitely knows his knives and HATES a dull knife. HE LOVES THIS PRODUCT. He loves it so much that he took it to work (the White House) to show the chefs there and suggest that they get them. He also gave his first one to his best friend who is the head chef at a high end French restaurant who also loves it and for some reason had never seen it before. Its sharpening ability equals or betters the intricate and difficult "professional" sharpening tools and its safe and easy for the least knowledgeable of chefs. I've used ours to sharpen scissors as well and it worked perfectly. I recommend this to anyone who is sick of dull knives and even more sick of trying to sharpen them with all the complicated tools out there or who doesn't want to pay someone to sharpen their knives for them. This works wonderfully. We plan to buy several more and give them as gifts to people we know who like to cook or hunt.
- This is the best manual sharpener there is. It works great and sharpens well. You can't use it for surrated knives, But is very compact and you can take it anywhere.
- They need to lose the "Rachel Ray" connection... what a waste of their money. This is a very good sharpener for the money. I have been looking for something that does not use steel and ceramic rods and discs. This clever spring steel with diamond coating is great for 20-degree angle knives. We use a different sharpener for santoku- by wustof. If you break this opening it or can't figure out how to use it, you REALLY have a problem and need to get something else and lighten up your grip-- it is a piece of cake and takes very little storage space when closed again.

- excellent purchase, better than the one I had when working in a packing house.
- First time I tried to sharpen my Anolon knives and they are really sharpener than before. So it is worth buying after, of course, I was researching all reviews about this. So it is affordable.
- This steel is very nice for the price. The length is fine for nearly any knife and the material itself is of a suitable hardness for correcting cutting edges. The handle is easy to hold, and it has a nice heft and balance. Exactly what I would expect from a Henckels product.
Now, a brief clarification: A steel will absolutely not "sharpen" your knife. It doesn't have a grit so much as the steel used is much harder than the knife. (If you have a dull edge you can run it along the finest steel for hours and not get a sharper cutting edge.) What it does do is simply correct the angle of the knife's edge that tends to get bent to either side during normal use. When you run the leading edge of the knife down the steel in the correct manner, a sharp edge should go back to the appropriate angle. If you have a dull blade, you need to hone a new edge. (For that you may consider using a professional sharpening service. this can be a little tough for a novice...sorry!) Once that is done, use your steel each and every time you pull your knives from their home to keep the edge at peak usability.
Keep in mind that you could sharpen a spoon to a razors edge, it just won't keep it for long. Better knives hold an edge for much longer due to the quality of the materials and their hardness. Few of us need an exquisitely expensive set of knives. Just buy a nice set for a good price and keep on using a good steel!
- Not only did Amazon offer the best price bar none (web or bricks and mortar), but when I opened the package and slid my knives over this sharpener, I could feel the resistance as the blade ran over the steel. My primary knife, by the same maker, is even more of a joy to work with after using this tool. I am admittedly not open to the fancier modern sharpeners that cost at least four times what this one does. I am very satisfied with the results and look forward to sharpening my knives (even those that are not made by Henckels) with this tool every chance I get.
- It is what it says it is and is great for putting that finished edge on knives. About 6 or 7 passes on each side keeps my wifes favorite kitchen knife razor keen. Also used it on my pocket knife, cuts through boxes like butter.

- The title say's it all, AVERAGE electric knife sharpener at OVER PRICE. I should have paid more attention to the other 3 star reviews of this product. I will KEEP this product only because my other electric sharpeners I have burned out and I don't have the time to research electric knife sharpeners. My advice to any one looking to purchase an electric knife sharpener is go to any discount store and buy any one of the many available off the shelf. Maybe someday soon a LASER sharpener will become available for home use.

I have read many reviews for knife sharpeners and this one was always at the top of the list. I was not disappointed, it is as advertised. Easy to use.It gives a knife a sharp as new edge.Well worth the money.
- The warning that the "knives will be sharp so be carefull" should be an audio so when you open the box, it yells at you! The knives were sharpened
per instructions (a must read!)and within a few minutes, both my husband and I had cut ourselves! A little care and we are both cut free, but initially look out! This sharpener really does the job!
- I sharpened my set of Henkels that are 6 years old. They couldn't cut your finger even if you tried.
Fast forward to the M130. Within 10 minutes, all my knives were sharpened. I opened up our brand new Global knife from Williams-Sonoma that we got as a wedding gift to compare.
I cut several oranges with the global knife and then with the Henkel's chef's knife. The difference is so minimal that you would hardly be able to tell unless you were doing an A/B comparison.
The $150 is a lot better than buying a new set of knives. Great thing is, I'm planning on helping my parents and in-laws sharpen theirs as well. Gots to get my $$'s worth!
- I have owned a Chef's Choice knife sharpening system before but it was an old lesser model. It performed ok and made my knifes useable. I read a lot of reviews for this product and decided to get one for myself and I also sent one to a friend. I love to cook and I have a nice set of knifes that I was going to take out to have professionally sharpened. I got this system and was a little skeptical due to some of the negative reviews. I followed the directions and took my time with the sharpener. I was AMAZED with the results; it performed just as I hoped it might. I prefer a steeled edge so I followed the directions for a fine steeled edge using step one until I got a consistent burr on one edge. I then ran it through step two for 20 passes on each side and then did a very light and quick two passes through step 3. I got an amazingly good edge on my knifes and they cut through things so smoothly. This is a wonderful system but you have to take your time and pay attention to what you're doing. The biggest key is to let the system do the work and not force the blades through the steps. I will recommend this system to all of my friends and I will send one to my brother who owns a restaurant. This system makes a huge difference and for the person that likes to slice easily through food instead of sawing through it you will be pleased with the results.

- After seeing that it costs hundreds of dollars to get a set of knives sharpened by a "professional" and being too lazy to learn how to do it manually myself, I decided to give this a whirl. I figured, as long as it didn't ruin the knives, my wife would be happy. She used it once night after washing some knives, it only took a few minutes, put them away and then we went on vacation a few days later. After we returned, having forgotten that she had sharpened them, she was perplexed as to why the knives seemed quite a bit sharper than she remembered. It took her a few minutes to recall she had used this sharpener before we left. Granted we're not chefs, but you'll certainly notice the (positive) difference with your knives after using this sharpener.
- We have Henckels knives, so figured the match would be a good idea. Didn't seem to matter. They shreaded one of the blades, and the others are just not really sharpening. The metal/ceramic sharpeners are a good idea, but not from this company. You can also invest in a sharpening stone, that will do just fine, just a little more work.
- To get a really first rate edge, I use a Lansky system with the guide rods and different angles. However, that is a pain for a quick touch up because it requires clamping the blade down and setting up the rods. This Henckel's model is awesome for touching up an edge or honing as it is also called. I do not use it for re-setting an edge or sharpening. The difference...honing is that last step that gets it really sharp. Sharpening can be thought of as re-setting an edge that has been really dulled. The carbide wheels are really supposed to sharpen, but I don't get very good results. The ceramic wheels are simply the best way I know to get a good quick hone.
- Good product for the home. You are not going to get razor sharp knifes lke a professional sharpening but not bad.
- I thought this was great when I got it. Now, after several years it doesn't do a darn thing.

- I got this item from the Handy House when it first became available at that time The Handy House was the only one handling it. I use it a lot and it does a great job on knives. It can not be used on serrated knives, But great for all others.
- Very well made sharpener, folds for easy storage, hands protected while the ease of sharpening is amazing. Follow the simple directions for sharpe blades. A must have in the Kitchen and Tackle Box.

- I have never been able to master the sharpening stone and have tried several other knife sharpeners that did not work well. This one was easy to use and my knives are all sharp now.
I noticed others had commented about lack of instructions. On the back of the package it gave instructions for sharpening knives and scissors.
- only few stroke made the knife really sharp. definitely recommand for those who spent a lot of money and waiting for a professional sharpener.
- If the sharpening steel that came with your knifes just isn't cutting it (pun intended), then this sharpener is for you. One slot with steel for rough sharpening, one slot with ceramic rods for fine sharpening (I use this slot most of the time), and one slot for scissors (haven't used this one yet). Very easy to use, very stable, and VERY effective!
If you keep your knives sharp, it should last for years!
- Great product! I used this at work to sharpen all of our scissors which were all dull and we constantly had to replace. Everyone was very happy to have sharp scissors and our store will save money not having to replace scissors. Also environmentally better.
I use this at home as well in the kitchen on my cutco knives it works pretty good.
- I'm always looking for quality tools at great prices and this is one of those. It's easy to use, stable and sharpens well. The dual function (for knives and scissors) is great.
My only user suggestion is that when you sharpen your knives, have a cutting board or a wood board under the sharpener when you use it to protect your countertops. When you pull back through the sharpener with the knife, the tendency is to hit the counter or table with the tip of your knife because you are pulling and applying downward pressure at the same time.

- This sharpener is very quick and convenient to use. However, the stones are very course and if your not carefull youll take more metal off the blade than is necessary. Ive started using the second stage only and completely bypass the first stage because its to course.
- I was skeptical about this item and the results definitely proved me wrong. The directions state that you need to glide your knives in a single direction, once on the left inserts then you move to the right, and voila! Your knives are sharp again! No harsh pulling or pressing. The only thing that's lacking in this product is that it doesn't work with serrated knives or shears; therefore, if you want a sharpener that takes care of those types of knives, I'd purchase another product. Most of my knives are straight edged so this works well for me.
- I wasn't sure I wanted something else to sit on my countertop. But for the first time in my married life (35 years), I now have SHARP knives. They cut through tomato skins easily. When I take the knives out of the dishwasher, I just run them through the sharpener, then put them away. Now I always have sharp knives. Wonderful product, especially for the price!
- I took a chance and ordered the Presto Pro EverSharp Electric Knife Sharpener based on a previous review. I am so glad I did. It is easy to use, directions are easy to follow, and I couldn't beat the price locally. My knives are so sharp now they kind of scare me so I am extra careful when I am cutting anything.
- I have a set of Wustof knives that were once very sharp and easy to use, but over time became so dull as to be unsafe. They are good knives but not worth enough to have professionally sharpened. So I bought the Presto Pro Knife Sharpener and was not disappointed. I never realized how dull they were until I sharpened them all. There are two wheels to put the knives through and I found it easy to achieve a very nice sharp edge on all my knives. At $24 it was well worth the price.
