- This is great steel, makes a huge difference in keeping my knives razor sharp.
For everyday use I just take 2-4 strokes as light as I possibly can touch the steel almost just the weight of the knife itself and edge stays razor sharp.
when knife starts to dull just a wee bit I increase pressure across the several grooves which usually brings edge right back then a couple very light strokes and viola.
I sharpen my knives to a 15/20 double bevel edge then strop them to a high polish.
Using this steel I only need to re-sharpen with a stone maybe 2-3 times a year at most.
- I've had this steel for almost a year now, and have been very pleased with it. I use it in a home kitchen, competition BBQ, and when feeding large groups, so it gets quite a workout with a variety of knives. A lighter hand when steeling is called for with this piece than with most others.
I would highly recommend this tool.
- I normally don't like to spend lots of money on things like this, but if there's one thing I love, it's very sharp knives. What scares me is dull knives.
Now, let's get one thing straight here; this tool does NOT sharpen knives! It takes an already sharp knife that has been used to cut things (hopefully on a good cutting board), ant straightens the edge out.
This one just happens to do it so much easier and better than those round things that come with all those cheap (and not so cheap) butcher block sets.
As soon as I get done using a knife, I wash it, straighten it, and then place it lovingly on my magnetic wall strip.
I have some pretty cheap knives in my collection, but because I take care of them this way, when they DO need sharpening, it sure is easier to do.

- Am I ever impressed with this knife - makes any bread slicing (even a stale baguette) a pleasure. Good price, excellent item
- Everything that Anthony Bourdain said it to be.
Good for bread, tomatoes and all things soft.
- This inexpensive knife is loving referred around my house at the "dick knife." It rests in a block with my Global, Shun and Henkel blades and get used as much or more as its blockmates. The ergonomics are what make this a delight the use. This replaces the "dick knife" that a I gave away to a house guest who fell in love with it - and that's the second time that's happened. So here's my review summary - buy it.
- It cuts vegetables beautifully.
The handle is cheesy but I like the offset design.
I purchased another one along with Tony's "No Reservations" for a gift too.
This is something for everyone on my gift list.
- I now use this knife for all my cooking needs, it's about the only knife I use now. Highly recommended.
