- First I was very surprised, when I first time have seen the steak knives in a three star michelin restaurant in Alsace in France. They have no serration. They were extremely sharp. So I asked the chef, Mr. Westermann, why they are like this. And he explainded. They have no serration, so you can easy resharpen them by yourself. This way you always have the sharpest steak knife. If you resharpen them ;-)
I do it very easy frequently with a stone. Everybody loves my new staek knives!

- I decided to purchase this knife after using it in a cooking class. I cook frequently, but never splurged on high quality knives. This knife is amazing! It's much lighter than many of the German brands like Wusthof and Henkels, but still cuts through food effortlessly. It also has an ergonomically correct handle, so it feels great in your hand. Oh, and not to mention, it's beautifully designed.
- I ordered this knife on Fri and needed it for culinary school on Tues and it was here! Thanks for a quick and correct shipment, it's made school so much more pleasant. I got an A on the knife skill exam, only 3 students in 6 yrs to receive such high marks. Thanks a bunch.
- Lighter than a Wusthof or Henckels German style chef's knife, this is a joy to hold. It may look funny to some, but its function cannot be denied. It's not as light as my Shun, and not as sharp right out of the box, but it doesn't feel as delicate either- I'm not afraid to hack away at bones or other tough material.
A little work on the whetstone and I easily got it as sharp as my Shuns. Similar to the Shuns, it holds its edge very well (as long as you hone it frequently).
I don't know what people are talking about when they say the knife slips when gripped with wet hands. I've used it with wet hands, and as long as I grip it properly (around the "pearl") I'm fine. Besides, if you're that worried about it, wipe your hand already!
All in all, a good value.
- I ordered this knife from Amazon and received it promptly. This was the first Chroma 301 that I had purchased. I had seen them before in kitchens, and was initially attracted by the sleek modern design as well as how easy they would be to keep clean (NSF) no where for bacteria to hide. I was pleasantly surprised when I first used the knife and found that it was light, well balanced and super sharp. I have been buying these knives ever since--working on a full set 1 at a time. So far they have all been super quality, no complaints at all. One thing I have a little trouble getting used to is the fact that you shouldn't use a steel with them. You must sharpen with a whetstone which I have learned to do about once a week as I use them daily in our catering business. I gave my son, who is one of our chefs, the heavier german knives.

- I recently purchased a set of 6 of these knives, and I couldn't be happier. We were originally considering Global and Wusthof Culinar knives, but once holding those and then these, we decided these were the knives for us.
Their unusual design is not only stylish, but functional. The wider handle design makes them easy to hold onto, even when your hands are wet or greasy. (Not the case with the other two.) The knives are also heavy and extremely well balanced, giving you a solid feel when you cut through something. Finally, they are forged out of just one piece of metal, so there are no seams (like on the Wusthof Culinar line) between the handle and the blade, making them a breeze to clean up with a little soapy water. (As with all good knives, they should never be put in the dishwasher.) This bread knife cuts through soft or hard bread with ease. It is so sharp that I think it will be a long time before it needs sharpening. (For comparison, I use some of the other knives in my set every day, have had them for 3 months, and I'm just thinking of sharpening for the first time soon.) I really don't think you could go wrong with this knife.

- I had an opportunity to use this knife in a recent cooking class and was pleasantly surprised. I expected it to be "just another pretty face." And it is a gorgeous knife, but, more importantly, it is incredibly well-balanced and feels great in your hand.
I gave it 4 stars because I am, personally, still partial to those heavy, traditional German knives from the likes of Wusthof and Henkel. However, this one is well worth the money. It would also make a very impressive gift.
- I cook often and this is the absolute BEST KNIFE I have ever used. I do have that other "famous maker" German knives set, but discovered that Chroma knives are FAR SUPERIOR!!!
They cut trhough everything like butter, but the best part is ERGONOMICS. They truly mold to your palm and are extremely comfortable for all tasks: chopping, slicing, mincing, dicing. Try one - and you'll understand.

- The Chroma Chef's Knife I recently purchased had a glaring flaw near the tip of the blade. There was a noticeable gap where the edge had been ground in a little too far. I had to spend 2 hours on a wet stone the repair the blade. That's a little excessive for a brand new knife.

- I purchased this whetstone to go with my set of chroma knives. I thought it was a little expensive, but ordered it anyway because I felt that if you have the knives then you should probably order this whetstone. It arrived very quickly and was very nice quality. It even has rubber feet on it so it will not slip when you are using it wet. You must soak the whetstone in water for about 15 minutes, until it no longer absorbs any more, prior to using. Your knife is then drawn back and forth on the whetstone at about a 10-15 degree angle to the blade of the knife. In very little time the blade is brought back to it's original sharpness or better. It is suggested to use the whetstone 70-80 percent more on the side of the hand that you use. That would mean if you are right handed then sharpen 70-80 percent more on that side than the left side or vice versa if you are left handed. I use a ripe tomato to test the sharpness on. In all I would say that this whetstone is a good valued tool that does a great job.
