- I've had this boning knife for a few weeks now and I'm quite happy with it. I initially planned on buying a boning knife from the "Twin Select" series, but decided to go with this model as it was much, much less expensive. I've used it a few times now and found that it works quite well. It's sharp, nimble, and does everything I need it to do. Summary: Save your money. Buy this knife.

- I bought this knife for boning deer, and it works wonderfully! I particularly like the flexible blade as it makes it easier to cut the meat off of the bone. It is very strong too. This is a high quality knife, and I will purchase more Global knives.
- If you like global knives and already have a Chef's knife and a bread knife and want to get something usefull get this. I have used this knife to fillet fish and bone meat. The flex in the knife is great and the knife stays sharp for a long time
- A chef's knife is great for many of the daily tasks required in a kitchen. But if you're de-boning meat or fish, then it just won't do. The boning knife fills in as a perfect replacement for this type of job. I've used my Global boning knife for filleting every kind of fish imaginable as well as boning out pork, beef, venison, and poultry. I wouldn't dream of touching another knife for these jobs. The blade has the perfect amount of flex to get in and around joints and curved bones that would be otherwise impossible without this knife. And it still sports the ultra sharp, low maintenance blade and devilishly good looks that is expected from any Global knife. If you fabricate a lot of your own meat, then I have no idea why you don't already have this knife.

- You won't go wrong with this knife, if you need a boning knife, just buy it. It is everything you would expect from a great knife!
- We bought this knife to trim tenderloin, after being inspired by a televised cooking show. This was my first investment in a really good knife and I had a hard time believing that it would be worth the price. Once the knife arrived, I became a believer. This knife has great weight, balance, and a fantastic blade for meat (just enough flexibility to trim bits of fat and gristle without cutting into the good meat). It was worth every penny.
It's really amazing how much easier it is to work with a good professional knife. We later got a (not quite as expensive) set of Henckels and, although they are good, they are not quite as nice as this particular model. This Pro S series has a better handle and a nicer weight. If you need a good boning knife, this is the one to get.
- I work with fish and other seafood all day long, and I've been looking for a good, flexible knife to fillet and skin fish with, to no avail...every knife I've had has either been too light, or not sharp enough...
Needless to say, I've found my knife...it is a godsend to anyone who works with fish, chicken, meats...the blade is flexible enough to make skinning fish like salmon, halibut, haddock, snapper, etc. an absolute breeze, but stiff enough to make boning chicken & other meats very very easy!
I do recommend only handwashing this knife, however...it says dishwasher safe, but I wouldn't risk the high-heat of the wash cycle...
All in all, a GREAT addition to ANYONE'S kitchen.
- I use it for everything and rarely for boning. It's a must have for any kitchen hands down. It's super sharp & super durable. I don't know how I survived without this excellent knife!
- this is a great length for paring. small enough blade, but large handle for great control, which is essential when using a knife!

- These knives rock. I almost have every knife they make and I love them all. Especially the bread knife! The blue fish knife (how brilliant is that to color code knives?) is terrific and showed up just in time for making gravlox this weekend!
Oh SO worth the money!
- This knife is insanely sharp!!! I love it!! I have a much more expensive chef's knife (cant remember the name but it cost 60 dollars) and this knife is just as sharp if not sharper!!! cuts like butter though anything! I dont use it for fish only, it is a good small knife for cutting all kinds of things, when you dont need a big long chef knife. If you get this you will not be disappointed at all.

- I've been using these knives since the 80s,when they were about $20 and made in USA.they're alot cheaper and almost as good.
- For price and function, you can't go wrong. I use this knife every single day to cook dinner. I also have a chef's knife and a bread slicer. These are the only knives most home kitchens will ever need. It sharpens well and I put it in the dishwasher. This is my second one ... it's not that the old one is worn out (I've had it for 10 years) ... it's that I'm afraid I won't be able to find another one when I do need it.
- I paid under $10 for this knife and it is well worth it. The blade is sharp and has a nice spring along the length. It feels good in the hand and does quick work butterflying cutlets.
- I have had this set for about a year now. At first I was a bit concerned the blades seemed a little thin (I thought a nice set should have thicker steel). However, unlike every other cuttlery set I have owned which became dull after use and difficult to sharpen, this set sharpens to razor sharpness very easily again and again! It's the best set I've ever owned.
- Fillet knife has large sure-grip handle with stainless steel forged blade for maximum sharpening capabilities. Great for cutting any fish into nice uniform filets.

- I am a hunter and I process the game I take myself. This boning knife was just what I needed to speed the process along. I recently processed a 100 lb. hog. The knife was flexible and narrow which allowed me to get the most from the bone. The handle was easy to grip. The blade held a good edge through the entire hog, I did not need to stop and steel the blade.
I used it the following week to process a deer with the same good experience.
At this great price how can you go wrong.
- Opened the knife from the package, and it was perfectly sharp. It fits in the hand well, and cuts well. America's Test Kitchen suggested the knives for price and quality, and to me they were right on every aspect.
- America's Test Kitchen recommended this boning knife and they were right. This knife is sharp straight out of the package. I used it the first time to cut the silver skin from some beef and it was so easy using this knife. The sharp point and long thin blade enabled me to get right under the silver skin and I did not cut into the meat itself. I was able to cut neatly and precisely where I wanted to due to the comfortable handle and sharp blade. Why pay a fortune for a boning knife when this one gets the job done quick and neat. Good job America's Test Kitchen and thanks R H Forschner for making another affordable but quality product.
