- I love this pan ....it is so non stick and cooks extremely well. I don't like a larger wok because if you try to cook too much food in a larger pan it will cool down and your food gets boiled not fried quickly enough. This pan being smaller ... does not allow you to try to cook too much, it's great really ! Pricey but i think worth it, it doesn't have a lid . I have a lid from another pot, that I use occasionally and it is fine ,( who wants another lid to store? ) And i do not want to pay for a another lid from all clad with the price they charge !
- It's All Clad quality, but the size is just too small to do anything substantial with it.
- Definitely not a replacement for a standard fry pan but this is a great addition to your established cookware set!
I love doing stirfry in this pan. This pan heats up fast and evenly, even on my old stove. I really enjoy tossing food in this pan, the rounded wok-like sides really makes tossing food easy and mess free. Can't say enough good things about this pan. One thing though, if you don't have a lid that fits this pan I would consider looking at the pan with lid included (or purchase a tempered glass lid from Amazon). I find myself requiring a lid for quite a few of my stirfry dishes.
- This wok-like pan is perfect for small to small-medium batches of stir fry; since I purchased it I find myself getting my large wok out less and less.
Like other All-Clad pans, it has even heat conduction, has non-stick qualities without the non-stick finish-- non-stick finishes seem to impede browning-- and is easy to clean. This pan is a workhorse in my kitchen!
- I do a lot of stir frying, using one pan to do many dishes. As a result I needed a pan that had non-stick quality for quick and easy cleaning and one that could take high heat from my professional stovetop. When pan and oil are heated to the right temperature the interior 18/10 stainless steel surface behaved as if it were nonstick. The heat was evenly conducted bottom through the sides, this due to the aluminium core sandwich being continuous from the bottom up the sides. The sides are high enough to not have food spill out in the process of vigourous stir frying. The height is also good for small item deep frying. The steep sloping of the sides enabled food to rotate well, falling back easily into the pan. Quality pans tend to be heavy, All Clad without exception but this size is perfectly manageable for tossing ingredients if need to. It also cooks a generous portion for one to two persons. All types(including metal) of utensils can be used with it. This is a solid, handsome and versatile pan with wonderful easy care and use. It is a total joy to cook with and one that gives you confidence that it will last a long, long time.

- All Clad Stainless 14-Inch Open Stir Fry has not been used as yet. It will be a wedding present for our daughter. Feedback can be given after September 2, 2006.
- I did not find a problem with the balance, as previously mentioned by another reviewer. The only thing a potential buyer needs to be aware of is, that if they are planning on tossing their food, they had better be strong because this unit is heavy! Other than that, it proves to be very useful for large portions. It heats quickly, heats evenly, holds the heat and leaves plenty of room to stir. Yes, it does heat evenly and allows the heat to drift up the sides. The purpose of a stirfry pan is to allow heat to move the sides of the pan to allow food touching the sides of the pan to cook as well. Now keep in mind, there isnt a perfect stirfry pan out on the market if you are cooking on a traditional gas top, flat top or coil range. True frying ala Asian style is done on an open flame!
- This pan is heavy and badly balanced, and the handle is extremely uncomfortable. With a pan this heavy you need a good handle; this one is narrow (ruins the balance) and has sharp edges that are unpleasant to grasp. The pan is far too heavy to let the cook manipulate and flip and toss food the way one should for a stir fry or saute. I also find the surface very hard to clean -- the slightest fond sticks more to the pan than the food. Mine has been soaking in my sink for 48 hours now after cooking a very basic stir fry and I still don't think I'm going to be able to get it looking clean again. This is my first piece of All-Clad and it's very disappointing.

- I bought this to stir-fry tofu so that I could phase out my non-stick pans. I followed all-clad directions to warm the pan on low heat, add some oil and then add the food. But both times, the tofu has stuck and become a mess. I haven't tried veggies yet. Maybe they will work better.

Count me among those complaining about the design of ALL-CLAD handles. They are apparently designed for a thumb-on-top grip that permits only lifting on a verticle axis parallel to the forearm. Any attempt to tilt or rotate the pan around this axis will result in a loss of control. Of course, anyone with very little hand strength wouldn't attempt such a maneuver in the first place. All-Clad makes a great product that's beautifully finished, but I'd like to see ALL-CLAD offer an alternate handle design alongside their standard one, and then let the market decide.
I'm not aware of any one pan from any quality manufacturer that gets it all right, as the various strengths of their designs are offered individually, rather than combined into a single design. For instance, most people who are really into cooking are aware that copper has great conductivity and uniform heating characteristics. It is also beautiful, if kept polished. However, that latter quality quickly becomes a liability if one isn't into polishing pans for display purposes, or would like the convenience of dishwasher cleaning. Nonstick of course has it's own set of attributes and liabilities.
IMHO, the ideal pan would be stainless inside and out, but with a sandwiched copper-cored bottom for more even heating and better heat retention. There is no need for a copper band to let our guests know that our pots are copper-cored. If I considered it important that they know, I could tell them after loading the dishwasher. I'd rather have copper's functional benefits than its cosmetic liabilities. In short, I'd rather have the utility, convenience and durability of stainless on all exterior surfaces. The only exception might be the lid. I'm partial to glass, but wary of possible breakage. Stainless is a much more forgiving material. Oh, and a handle than I can actually get a grip on would be fantastic!
- This is another great pan from All Clad. The nonstick surface is superb and the highly polished exterior is stunning. This size if perfect for cooking sausage and vinegar peppers or stir-fry for 2-4. Like all All Clad cookware this pan is very well made, heats evenly and comes with a lifetime warranty. I have never had to use it but from what I hear warranty replacement is a quick and easy task. The handle is easy to manage and it has a handy loop on the other side. The nonstick surface is great and it is very easy to clean. Top notch! Highly recommended!
- I bought this pan a few months ago, and its OK. It cooks nicely, but like all All-Clad, it suffers from a rather developmentally-challenged handle design. While the cookware itself it fabulous, the handles on all of the All-Clad cookware must have been designed by some sort of mad scientist. They are much too narrow relative to the size and weight of the pans to which they are attached, making them intrinsically unstable, and completely uncomfortable.
On this particular pan, the combination of a relatively short, thin handle and heavy, deep pan, makes it quite easy for the handle to rotate in your hand (even using a towel!), flipping the pan over. Its best not to try and toss this like you would a wok, because its quite possible the pan will flip over in your hand. Leave it on the stove, though, and it heats beautifully, and the nonstick surface is the best I've ever had on a piece of cookware. A great pan for stir-frys for one or two. I own three pieces of All-Clad now, and I want more, but I really, REALLY hope someone at the company will redesign the handles. SOON!

- Wow, this pan is the dream wok. Ok, ok it's not as big as a wok, but it does the same job. Clean up?... Do I even need to say? It is a snap. Just wipe it off with a sponge and rinse! No scrubbing, even with burned on eggs. Great buy overall!
