3 comments about All-Clad Copper Core 1-Quart Saucier Pan.
- They make it clear that this one does not come with a lid, but I would have never guessed that none of their other lids would fit. I have both the 6" stainless lid and the 6-1/2" copper core lid and neither fits. The 6-1/2" that comes with their small copper core saucepans comes closest, buth the shape of the lip (and 1/2" larger pan diameter) make it a precarious balance. Otherwise a very nice pan. I also find the copper core handle with the added bump on the bottom to be a lot more comfortable than their stainless handles.
- I own several pieces from the Copper Core line, and bought this piece simply because I found an incredible price on it. I didn't expect to use it often, as I tend to reach for my small saucepans; I just thought this saucier was just too small for much of anything. But I have surprised myself with this one! I have melted chocolate, made small batches of glazes, a cooked vinaigrette, and always use it now for my reduction for blender bernaise. It comes in handy more than I expected, and the long handle is especially convenient (and not typical) on cookware of this size. It is quickly becoming a favorite piece. And like my other AC Copper Core, it heats beautifully and evenly on low to medium heat, and is a delight to cook with.
Don't hesitate if you are wondering about the size - you will find many uses and love this little gem.
- I'm not 100% convinced that the copper core is worth the premium price tag when the aluminum core Master Chef line performs about as admirably in terms of evenness of heating, but this one was in stock and the other one wasn't, so the choice was simple.
It's a tiny little guy, but a solid performer. It came up to temperature quickly, and my infrared thermometer showed the sides staying within 5-10 degrees of the bottom at all times with no significant hot or cold spots anywhere. I elected to prepare a very simple dish--Farina with coconut milk and palm sugar--for its maiden voyage, and it cooked well without any scorching at all. I actually had a hard time telling when it was done because of the complete absence of bubbles--something I'm used to seeing with my old pan which has hot spots a'plenty.
Some people have complained that All-Clad's 1-quart sauciers are off balance and easy to tip. While a bit of pressure on the end of the handle will indeed lift the front off the range by about an inch, you'd really have to knock it pretty hard to actually slosh anything out of it, and every other similarly sized pan I've ever tried exhibited identical behavior. It absolutely does not wobble around of its own accord and I wouldn't worry about it tipping any more than any other pan you might own.
My only real gripe is the handle. I hate all of All-Clad's handles; they're not only uncomfortable, they actually hurt. Using a towel mitigates this somewhat, but the whole point of the stay-cool riveted handle is to eliminate the need for such measures. This one loses extra points because the rivets are simply too large for a pan this size. They jut out way too far and make both stirring and scraping down the sides a tedious, noisy affair. A minor annoyance, but an annoyance nonetheless.
All in all, it's a great pan and it runs circles around the old Calphalon pile of junk it's replacing. It's also made in America and boasts a lifetime warranty, so if you ever manage to stir your way down through to that precious copper, you'll get a new one. Just make sure you realize there is NO LID for this model; gotta step up to the 2-Quart for that.
P.S. DO NOT ATTEMPT TO DEEP FRY ANYTHING IN THIS PAN. I just had a late night falafel (yes, I know that falafel is not a sauce) preparing incident and while the pan performed as admirably as ever, the fact that the sides conduct so much heat means that all the oil splatter that would ordinarily just kinda sit there until you washed it off BAKES onto the surface. It's not ruined or anything, but man what a lot of scrubbing.

5 comments about All-Clad MC2 Sauciers.
- The gently sloped sides of All Clad's 2-Quart Saucier exactly match the curve of All Clad's stainless balloon whisk (and many other balloon whisks for that matter). This gentle curve, combined with the very smooth tough stainless steel interior make this a great surface for frequent stirring. All Clad's incredible heat transmissive properties allow you to deftly adjust temperature - a must for delicate sauces, roux, and risotto. Of course this pan can be used as a general purpose sauce pan as well. The 2 quart size is just the right size too.
As for the MC2 finish - it's fine. It gets stained - but the soft matte surface is easily cleaned with a paste of cleanser (like Ajax or Comet) on a scrubby. Just rub the paste in a circular motion and power away the stains. You can use BarKeeper's Friend too - but plain cleanser works fine. I do this one every couple of months. All in all it's about the same to care for as anodized aluminum (and about as good as any other cookware except nonstick - but this is vastly more durable). Highly recommended.
- having an assortment of All-Clad pieces, I couldn't pass up the rare All-Clad MC2 sale.
Like the rest of the line, the MC2 has a stainless steel interior. The difference is in the brushed aluminum exterior. That's where the problem lies. Apparently this finish is a tad more porous than the LTD line. I keep getting 'stains' that require the Barkeeper's Friend. No big deal-but for a pan of this price, easy maintenence should be mandatory.
Wait for the LTD sale instead.
- This little pan heats uniformly. I use it for making oatmeal, reheating meals since I don't have a microwave, toasting seeds, and making sauces. It cleans up beautifully just with soap and water. I did accidentally put it through the microwave once, however (not recommended by the manufacturer), and the pretty finish is now somewhat dulled.
On the negative side, for reheating I find a lid helpful, but since this pan didn't come with a lid I use one from a different pan. This pan also has a few design flaws:
1) There is no lip, so pouring is quite messy.
2) The handle is heavy, and when the pan is not full it tips easily.
3) The sides are somewhat low, as another reviewer mentioned. I think this pan would work better as a 1.5 quart pan.
- We've been very happy with this pan except for one problem:
I don't know if the handle is too long and heavy or the base is too small, but this pan has trouble balancing and tips over fairly easily.
- For some reason, AllClad set the angle of the handle much shallower than on their other pots and pans--the angle is similar to a fry pan. When you lift the pan off the stove, the rim of the pan does not remain level. This is especially annoying if you are working with this pan alongside several pots. A minor detail perhaps. Otherwise, an excellent pan, great for cooking rice and reducing sauces.

- I got this for handling small pizzas and it worked like a charm. Very solid, feels good in the hand.
- What can I say...All-Clad makes beautiful, high quality, useful products. The fish turner is great. It also works great for taking large enchiladas out of the baking dish.
- This is a fine product that does the job well of turning large easy-to-crumble items. However, it is very large and hard to store without dominating the utensil drawer. It is fairly heavy due to its size and metallic composition.
- I received a few all clad products (the paella pan, sauce pan, and a fry pan) for graduation and they are excellent. Despite not being teflon, food doesn't seem to stick and clean up is easy. The handles don't get hot even though they're metal too (they do get a little warmish, so be careful just in case). I'm not sure if I'm supposed to or not, but I put them in the dishwasher and haven't had any problems. This specific pan is great for items like pasta w/ cheese and veggies. I love that it has a cover. The only drawback is the price.
- Just perfect for melting a stick of butter quickly. It also works well for reheating small amounts sauce or to infuse oil. Because I tend to pour directly from the pot, I wish it had a small spout. Be careful when using on a gas burner, its small size makes it easy to tip.
It's the same excellent All Clad quality. Dishwasher safe and polish with Barkeeper's Friend.

1 comments about All-Clad Cop-R-Chef Covered Sauce Pans.
- This is the pan that my children (and their parents) used for cooking
oatmeal, melting butter, making cocoa, heating soup, and an assortment of other homely cooking projects. It's a great all-around pot that is smartly designed and heavy enough to heat things evenly, but not so heavy that carrying it when it's full will be a chore. In contrast to French copper pots, this one has a stainless steel interior rather than tin, and is considerably more useful, because lighter in weight. If you occasionally forget about the rice or the oatmeal, your pot will not be wrecked - even after hours of heat baking the food. Soak in cold water and scrape it off - gracefully, in fact. Food can be scrubbed off with no fear of scratching the steel. Any old copper cleaner will polish the exterior. The lid has a loop handle, so that it can slip over the pot's handle for easy storage. This is a costly item, but will last forever, cleans easily, and is just plain beautiful to look at. It's simply a great gift, and by the way "All-Clad" products last a lifetime (and are warrantied as such).

- Want the best? This is it. I love it. Will last a lifetime. Looks beautiful. Better yet, it cooks wonderfully. Very little gas flame or electric heat is necessary to heat it to desired temperatures. Is very "energy conservative." If I lost it, I would buy another without batting an eyelash. I expect it will last a lifetime and could be become a family heirloom of the type that is "they don't make them like this anymore." If you can afford it get it.

- Like any All-Clad, I knew it would work out just fine. I needed an in-between size for sauces, soups, etc. The little pots are always too small and the big ones weigh a ton. Heats smoothly and seems to hold the sauce together. (I'm being metaphorical but that's the best way to describe it.)
- This is the second least-used item in my All Clad cookware. I find myself reaching for a saucier when I could use this pot. My advice is not to get a saucier in a similar size.
When I have used this pot, it lives up to the All Clad reputation -- heavy for its size and heats well. Angled sides really speed evaporation.
Williams Sonoma has a version of this pan that had markings on the inside that so you could see when you've reduced the contents by half or whatever. It's a novel, but expensive idea. I hink that pot retails for $150.
Dishwasher safe is always a plus. Stay-handle is nice as well.
- I have been replacing my cookware and believe All-Clad to be superior to anything else out there. The Windsor pan is better than a regular saucepan because of the sloping sides. It is so much easier for stirring puddings or making gravy. I don't have any "saucepans" but will use this one and the 2 1/2 qt. size. It is easy to be a good cook when one has good tools to work with.
- We just decided to upgrade our kitchen with the first step being replacement of old and no-longer-anodized aluminum cookware. Our choice: the All-Clad Stainless line without the non-stick coating(s). They are sturdy, beautiful to cook with and to look at (if you're into that kind of thing), and in the end, while we wash by hand most of the time, once in a while we have to throw the pots in the dishwasher when we have other (better) things to do. This way we won't worry about ruining a nice non-stick finish on our hard-working pots!
The 1.5 quart Windsor Pan was the champion of our meal last night - it made me look like a pro when making the gravy for a Sunday roast beef dinner, and I'm sure it will more than do the job on other sauces, too. As other reviewers say, whisking and pouring are much easier than with a standard straight walled sauce pan, and the slanted sides also help to concentrate the flavors as sauces are reduced.
- Bought this pot, for I thought it would be ideal for a single. It is. My first pot was defective, in that it was slightly oval, not allowing the lid to fit tight enough. After about four weeks of email with All-clad and receiving a replacement lid , I finally shipped it back (ten bucks out of my pocket), and received a replacement. Perfect.
This pot is great for cooking varying quantities due to the slope, and is great for pouring due to the curved lip. I've gradually been changing my cooking gear over to All-clad because of the quality. It's definitely like cooking with the cadilac of cookware: Overall 5 star for the whole set I possess.

2 comments about All-Clad LTD Butter Warmer.
- I've had All Clad LTD pans for a number of years now. I usually cook several times a day almost everyday & although these pans cook beautifully and the interior looks beautiful & cleans up easily, the anodized exterior looks terrible now. I wouldn't mind so much but I have them hanging on decorative pot rack. For that reason I want to replace them with the less expensive version in stainless steel but the financial loss is killing me. I don't have room in my small kitchen to put them away. We've had a stainless steel All-Clad sauce pan for a few years which still looks great and isn't embarrassing hanging from our rack. If you don't mind so much what your pots look like then these would probably be a great choice. If anyone knows any great secrets to keeping these looking great, please post them in the discussion area. I've contacted All-Clad several times and do exactly as they say without achieving any desired results.
- I just bought this All-Clad LTD Butter Warmer from my local Viking Culinary Arts center. It was a bit pricey, but TOTALLY worth the money. If you have a small amount of ANYTHING that needs warming or melting, and you're tired of the uneven heating you get by putting a small amount of product in a too large pot, you will not regret this purchase. I've used it for melting jams and butter and it works equally well for both. Enjoy!

- This was my one big cookware splurge. The shape, with a large surface area for reductions, and the small size appealed to me. Well, I used it once and now want all my cookware to be All-Clad!
