  1. After using it for a month, it has overtaken the Calphalon non stick as the everyday pan. Cooking is even and although i was initially scared about clean up it is a breeze. Th biggest test was cooking sausage that was sticking to the pan. Soaking with Bar keepers friend and a quick wipe was all it needed. This is my first piece of All Clad and I am a believer. It is worth the extra money, no questions asked. I m not wealthy and buying these by the piece so it is worth waiting and buying quality.


  2. I used this for the first time this week. I wanted something rustic, so I decided to braise turkey thighs with some root vegetables. Preparing the dinner was almost as good as the finished product.

    Because of All-Clad's technology, I didn't have to turn the range above medium to sear. There was ample space for browing both turkey parts. Adding color to the veggies was a quick process. Deglazing was very easy because the bottom was so roomy.

    From the oven came evenly done, tender and juicy turkey thighs. Clean up was easy. Wiped it out and put it in the dishwasher. Didn't even need to use any polish.

    My next task for this pan is a frittata.


  3. I ordered this item because of the great reviews and was excited to receive it. I received the first shipment damaged on both the lid and pot. It wasn't in the original box and the packaging was terrible. I was sent a second pot and even though it was in the original box, it had a 3 inch long scratch on the lid. If I am paying full price for an all clad stainless pot, I expect it to be pristine. I have not received a response from Amazon yet about a replacement. I will give them one more shot.


  4. This pan is great. It cooks very steady and evenly. After you cook something you can bring it right to the table as it is so attractive and well designed. We use it as a serving dish as well as a pan. Afterwoods, it is easy to clean and there is only one thing to clean as opposed to both a pan and a serving dish. Great for a busy family.


  5. For Christmas last year, my husband gave me my All Clad 13" brasier. I can't say enough good things about it. I reach for it constantly when I'm making a dish that requires some space. It serves a myraid of functions and looks great going from the oven/stovetop to the table.
    All Clad's not cheap, and if you're looking for a versatile piece, this one is it.

  1. (THIS REVIEW INTENDED FOR ALL-CLAD STAINLESS-NOT NONSTICK...saw no way to move it)

    Count me among those complaining about the design of ALL-CLAD handles. They are apparently designed for a thumb-on-top grip that permits only lifting on a verticle axis parallel to the forearm. Any attempt to tilt or rotate the pan around this axis will result in a loss of control. Of course, anyone with very little hand strength wouldn't attempt such a maneuver in the first place. All-Clad makes a great product that's beautifully finished, but I'd like to see ALL-CLAD offer an alternate handle design alongside their standard one, and then let the market decide.

    I'm not aware of any one pan from any quality manufacturer that gets it all right, as the various strengths of their designs are offered individually, rather than combined into a single design. For instance, most people who are really into cooking are aware that copper has great conductivity and uniform heating characteristics. It is also beautiful, if kept polished. However, that latter quality quickly becomes a liability if one isn't into polishing pans for display purposes, or would like the convenience of dishwasher cleaning. Nonstick of course has it's own set of attributes and liabilities.

    IMHO, the ideal pan would be stainless inside and out, but with a sandwiched copper-cored bottom for more even heating and better heat retention. There is no need for a copper band to let our guests know that our pots are copper-cored. If I considered it important that they know, I could tell them after loading the dishwasher. I'd rather have copper's functional benefits than its cosmetic liabilities. In short, I'd rather have the utility, convenience and durability of stainless on all exterior surfaces. The only exception might be the lid. I'm partial to glass, but wary of possible breakage. Stainless is a much more forgiving material. Oh, and a handle than I can actually get a grip on would be fantastic!


  2. This is another great pan from All Clad. The nonstick surface is superb and the highly polished exterior is stunning. This size if perfect for cooking sausage and vinegar peppers or stir-fry for 2-4. Like all All Clad cookware this pan is very well made, heats evenly and comes with a lifetime warranty. I have never had to use it but from what I hear warranty replacement is a quick and easy task. The handle is easy to manage and it has a handy loop on the other side. The nonstick surface is great and it is very easy to clean. Top notch! Highly recommended!


  3. I bought this pan a few months ago, and its OK. It cooks nicely, but like all All-Clad, it suffers from a rather developmentally-challenged handle design. While the cookware itself it fabulous, the handles on all of the All-Clad cookware must have been designed by some sort of mad scientist. They are much too narrow relative to the size and weight of the pans to which they are attached, making them intrinsically unstable, and completely uncomfortable.

    On this particular pan, the combination of a relatively short, thin handle and heavy, deep pan, makes it quite easy for the handle to rotate in your hand (even using a towel!), flipping the pan over. Its best not to try and toss this like you would a wok, because its quite possible the pan will flip over in your hand.

    Leave it on the stove, though, and it heats beautifully, and the nonstick surface is the best I've ever had on a piece of cookware. A great pan for stir-frys for one or two.

    I own three pieces of All-Clad now, and I want more, but I really, REALLY hope someone at the company will redesign the handles. SOON!

  1. with the conductivity of a copper, aluminum core and the craftsmanship of all-clad this pan is excellent.


  2. Performs just as well as its 1-quart cousin, only the rivets are more proportionate and don't get in the way of your stirring. This thing gets hot fast, and that heat carries all the way up the sides, so you need to make sure you keep them scraped down (anything left stuck to them during cooking, including oil, will bake right on and become very difficult to remove without harsh abrasives that can damage the finish) and always use a towel or pot holder when grabbing for the lid--it will be nearly as hot as the pan itself.

    I think anyone who makes candies or custards should own this thing. The evenness of heating is tough to beat and that smooth slope on the bottom makes getting your stirring implement down into those corners a trivial task.


  3. I have had this pan for almost a year now and I have been very impressed with its performance. It was my first piece of All Clad and I bought it because I wanted a copper pan with the maintenance ease of stainless steel. I was a bit skeptical that it would have the same temperature response that a regular copper pan has, but I'm pleased to report that it does. I can take liquids from a roiling boil down to a non-boil and back again literally instantaneously by turning the burner knob (I have a gas stove) -- the pan is that responsive. Also, the heat is conducted uniformly all the way up the sides -- you can put your finger along the top edge of the exposed copper sandwich and feel the heat transferred immediately when you turn on the burner. Since it is so responsive, you generally need to use a lower heat setting than with a regular aluminum/stainless pan or food will burn. This pan is a joy to cook with -- the shape is like a flat bottomed mixing bowl and is great for rice pilaf, lentils, and small sautes. It is well balanced and light weight enough to do real saute cooking where you toss and flip the ingredients in the pan -- and the higher sides prevent the food from inadvertently escaping. It is relatively easy to clean, although rice and lentils will leave a residue which requires Bar Keepers Friend cleanser to completely remove. Also, the exposed copper will become tarnished from heat and steam, but it is easy to clean with the cleanser. Overall, I am extremely pleased with this purchase and would recommend the Copper Core line to anyone wanting the performance of copper cookware.
