  1. I recently received this pan as a gift and, though I have not used it much yet, I think it is necessary to mention that the Amazon product description is wrong--this pan is not a wok, or "wok-like" in anything more than a superficial sense (it has rounded sides). It is much shallower than a standard wok, and has a much larger flat portion on the bottom than a standard flat-bottom wok (it is more like a deep skillet with a lid than it is wok-like). Yes, one could stir-fry in it, but that means little (one could try to stir-fry in a skillet or sauce pan also).

    Stir-frying will certainly be easier and better in an actual wok that is deeper and more rounded; I have one made by Calphalon and it is great. As far as this chef's pan goes, I plan to use it primarily for fricassees and braises.


  2. When I started law school, I moved into a studio apartment with only microwave pots to cook in. After a year, I decided that some better form of food was necessary. I first got an All-Clad 1-quart saucier, and then I got this amazing pot/pan. I need nothing else. It warms quickly and evenly and cleans beautifully. At first I choked over the price but I bit the bullet and got it. The cost is, granted, about the same that one can pay and get a whole set, but I've had those inferior sets before. They've gotten thrown out in a year or two because they're worth exactly what I paid for them. Should I ever actually need another pot, I won't look at anything but All-Clad cop-r core.

  1. I bought this to make pancakes. I didn't feel it did a good job. Maybe that is because of it's size, but I thought that because of the material, it is supposed to carry heat evenly to all areas of the griddle. I use a frying pan instead (also by All-Clad) which I find works much better. But after reading the other review, I will try it for cookies, and other baking. That wasn't something I thought of.


  2. I purchased the griddle because it was beautiful! I did have my doubts on whether or not I would use it but I find myself reaching for this pan all the time! I have several pieces by All-Clad and am very impressed with the quality. The griddle is large and actually measures 15 inches in diameter not including the handles. Total diameter at its largest point is close to 17 inches. I found it too large to comfortably use on a single burner on the stovetop and find myself using it in the oven more. It makes a wonderful cookie sheet! The cookies bake evenly and don't stick. I have used it for nachos and various appetizers. It makes a beautiful serving platter that remains warm while the food is consumed. The possibilities are endless!

  2. Heavy base promising even heat, nice tempered glass lid. It takes care of business.

    But under normal use the handle on the lid gets too hot to handle. They need to fix this elementary problem before their otherwise excellent product can be considered satisfactory.

  1. It's truly non-stick if you use it the right way. There's usually no need to bring the stove setting higher than medium high. This sort of cookware takes a bit longer to heat up but once its at proper temperature it cooks really well - evenly, thoroughly with really great results. After you use this cookware a few times, you realize that well made cookware really does matter. One internet commentator recommended testing for the right temperature with a few drops of water - sizzle means just right, and splatter means too hot. They're not as durable as cheap cookware, meaning you can't abuse them and expect them to last. They're sort of like fine instruments that you have to take care not to overheat - which damages them - or to mar the surface with harsh abrasives or cleansers - which apparently can ruin the cookware.


  2. Best cookware set I have ever had. They cook evenly. You don't have to use high heat at all. I is really hard to burn food. Only bad thing is the handle gets real hot.

  1. IT DID NOT LOOK LIKE THIS AT ALL. THIS IS NOT THE FREE ONE WITH THE $250 PURCHASE. WHAT I GOT WAS A CHEAP AU GRATIN PAN. IT WAS IMPORTED. IT WAS ALL BLACK, AND NON_STICK. NOTHING SHINY ABOUT IT AT ALL. JUST ALL BLACK. WHO WOULD BELIEVE THAT IT WAS ALL CLAD. NOT ME!!! I WAS SO DISAPPOINTED.


  2. I was hesitant to purchase this. ALthough I have almost the whole line of MC2 products, for au gratins I generally use my Le Creuset or Emil Henry pans. Well, I felt a bit flush and bought this. Best thing I ever did. Markedly superior cooking qualities make it worth the effort is you use this type of dish a lot. Also a wonderful substitute for cazuelas -- unlike most cermaic cazuelas, this can go on the stove top as wekk. I highly recomment this.
