5 comments about Chicago Metallic Commercial Baking Pan.
- These are some of the heaviest duty pans I've ever used. I bought it as a gift and wish I had ordered another for myself.
- This thing feels like a WWII landing craft. It's heavy, not pretty, but it sure gets the job done. This pan could be around long after the end of life as we know it.
Just keep it clean and dry. Don't let it soak in water or you might be sorry. All these products seem to season like cast iron. The more you use them the darker they get and the slicker they feel as the pores of the metal seal. Be sure to use a baking spray or oil and flour to keep the sticking down.
- This thing came by rocket ship ordered it yesterday two day delivery. It was here before noon today. Amazon must had a distribution center across the street!
I am so pleased with this pan. I'm waiting for the others to arrive so that I can see how they do with my bread. I cannot believe how heavyweight these pans are. It's obvious quality. I remember my mother having something like this when I was a kid, and I have not seen anything made of this grade of metal at any of the "Cooks Supply". Things will stick to this. So make sure you grease and flour the pan prior to putting your biscuits or bread into it. Let the pan sit for about 2 or3 minutes, give it a shake or two and the bread just falls out. I'm planning on giving myself an early Christmas present and see what other stuff like this I can find.
I know for a fact that these will outlast todays non-stick. I've never been able to get one to last more that 5 or 6 months without failing.

Buying this pan was a horrible waste of time and money. I've had it 7 months and it looks like it's 10 years old, badly discolored, with very dark gray spots that look like the metal is corroding through (like there is a hole forming). Chicago Metallic should be ashamed of itself for putting out such a shoddy product. I'll never buy this brand again. If I could change the number of stars I gave this pan, I'd change it to zero (actually, I'd like to make it -5). Owning this pan has been like a new romance where the first date is wonderful. Then you quickly find out that this person is not only a phony but has bad breath, chews tobacco, is a bigot and only likes you because s/he thought you had a lot of money.
If you buy this pan after reading this review, you deserve what you get.
UPDATE 12/28/07:
The pan seems to be trying to rust. On top of that, even though I'm trying to be careful and thorough about washing the corners, I'm still not really getting all the stuff out of the corners because it's virtually impossible. I'm disappointed because I like the "heft" of the pan. If I'd paid under $[...] for it, I might be less disgusted, but at $[...], it's overpriced. The biggest problem is the poorly designed corners. Amazon's review system won't let me change the number of stars I've given this darned pan, but if I could I'd change it to ZERO!!

I've had this pan for a few weeks now and used it several times. The glue from the label did seem to be a little harder to remove than I'd have liked, but I when I used some alcohol on a cotton ball it came off with very little effort. While I had the alcohol-laden cotton ball, I wiped off the whole inside of the pan and I think that was a good idea. So far, it has seemed to heat very evenly, no warping, etc. It cleans up easily (do watch the corners). It has a nice heft to it, feels sturdy and heavy duty, like it could handle anything. I have this one and the non-stick one so that I have a choice and can use what seems right for the job. So far, I'm very happy with Chicago Metallic.
- I too was sick of non-stick baking pans and was hopeful that these pans would be a good alternative. I ordered two of them. After using them a few times for baked pasta dishes, the pans seemed to be reacting negatively to the tomato sauce and breaking down. Even more annoying are the seams in the four corners of the pans which make it impossible to thoroughly clean food out of the corners. I wish I hadn't wasted my money on these pans.

- This baking pan is very sturdy. I love it. easy to clean and to use (does not leak even as a 2pcs item). the cake comes out very easily.
- Used this pan for several different batters without leaks. Very heavy pan so bakes nice and even. Easy removal also.
- The pan is great but the delivery method was lousy because it can by USPS and it took 3 weeks before I got it. That was terrible because I wanted to use it before Christmas that why I ordered it 12/10/07. But, great product and name brand. thanks
- This pan browns your cakes evenly and with the commerical weight your cake come out lighter and the smoother textured is fabulous!
- 9-inch tube pan is actually an angel food cake pan and it is 2 pieces, if it had been advertised as 2 pieces I would not have purchased it. I bought 2 pans, my husband encouraged to try because of the weight of the pan, but of course, it didn't work, it leaked in my oven. I only returned the pan I didn't use.

- My daughter wanted a cinderalla cake for her birthday. This pan was a great way for her to have it. I ended up making the frosting myself rather than buying ready made. It took some time to decorate, but I thought it wasn't to hard. It was a bit difficult to get the blue coloring right but that really didn't matter in the long run.
- This pan can be decorated to look like any of the Disney Princesses or any princess. I have made a Cinderella, Snow White, Belle, Jasmine and Ariel.
You can make this look like your little girl. Go to Wal-mart, or any baking store with a face picture of your child and have them make an edible picture out of it (it is usually made of a corn starch). Cut out the face and after decorating the cake, put the picture on. It will be the talk of the party for many years to come.
Also, instead of greasing & flouring the pan, Wilton makes a product that is much better. You just brush it on and that is it. The cake will pop right out. It is called Wilton Cake Release. I do not know if Amazon.com sells it but you can find it in the craft section for cakes at Wal-mart.
This pan is a good buy because you can use it for several different kinds of cakes for years to come.
- Just as other Wilton products we've used, this pan works great when we follow directions, and the cake comes out looking great! We use veg oil spray with flour before pouring in the mix, and it works well to keep the lines. Great product at a great price!

- Okay, I admit it, I own many different styles of these pans -- I am attracted to the various designs and high quality. Initially I was shocked at the price tag but as is often the case, you get what you pay for. Properly cared for, this pan will last a lifetime. The pan is particularly lovely because it has such a classic design. It is the perfect style to use for a cake soaked in liquor (obviously for adults). Recipes are readily available on the internet (check search engines) for making a syrup of melted sugar (when cool add coffee liquor, or rum or whatever...) poke holes in the cake with a bamboo skewer and brush with the syrup, let it soak in and repeat. These cakes are welcome during the holidays as gifts and spectacular additions to a party table. And, as some other reviewers have noted, pan preparation is so important. Spray Baker's Joy (plain cooking spray won't do) liberally in the pan to capture all details, then turn the pan upside down over paper towels to drain while you prepare the cake. Also, the thicker the cake batter the more detail you will achieve - so if using a cake mix alter it (many recipes are available on the internet in search engines - bundt recipe using cake mix, etc.) The cake detailing is just lovely. And, be sure to let the cake cool upright in the pan for 10 minutes before unmolding. Do not use any metal utensils or harsh scouring pads on the pan.
- This is a marvelous pan. It arrived on saturday and I baked a cake in it on sunday. Came out perfectly. I love the heavy cast aluminum. The light colored non-stick interior gives the cake a lovely appearance. My only quibble is with the product description given by Amazon. It says this pan has a 10 to 12 cup capacity. When the pan arrived the packaging clearly stated it is a 10 cup pan. Lesson learned. Always check the manufacturers website for an accurate description before purchasing.
- Well constructed, heavy pan, not flimsy like a lot of others out there. I've been very pleased with the results - even heat distribution results in an evenly golden brown crust for my bundt cakes. The pattern is so gorgeous that I often just leave the cake as-is, and don't even dust it with powdered sugar.
- this pan is great. this is my fourth shape I bought and all of it works perfectly.
- I have already used this cake pan. I was a little hesitant when it came because I felt it had so many designs that maybe the cake wouldn't release from the pan. WRONG! It came out perfect and beautiful.

- I bought this pan on impulse because it is incredibly cute. The little cakes shapes are gorgeous! But despite using baking spray, the cakes did not come out easily, and they lacked definition. If I use more baking spray, I'm afraid I'll get even less definition. I'm going to try baking them a little bit longer, to get more browning and perhaps more firmness in the cakes. So, it's a darling pan but I can't give it 5 stars.
- I only used this pan to bake chocolate muffins. I used the Baker's Joy Flour Spray to ensure easy release and that worked great. However, the details of the designs were not well defined. Perhaps that would show up better using a lighter colored batter. But the size is perfect and I like Nordic ware products. I have not tried making chocolate candies with it, but perhaps turning the pan over and using a mini creme brule torch lighty near- but not touching the pan will get the chocolates out without melting them?
- This is a fantastic pan, that with the right method makes perfect little cakes and truffles.
The Nordic Ware website has amazing tips, and if you follow the instructions, it works. Baker's joy or shortening and super fine flour gives you the detail you should have with this pan.
The reviewer with the thicker batter idea is correct, and I would never use an "ez-make-insta-batter" with this gorgeous pan, the nasty additions they put in it may gum up your pan (lecithin, fats).
Worth the extra mile!
- okay. there is a secret to using this pan. cake batter doesnt work. all of my little shapes got stuck. but i used gingerbread batter and they came out beautifully (with the help of a greased pan of course). so the secret is to use a thicker batter. muffin and bread batter anyway.
- I ALSO HAD TROUBLE REMOVING CHOCOLATES FROM THE MOLDS. THE PLAIN CHOCOLATES USING EXTRACT CAME OUT FINE...THE CHOCOLATES USING CONDENSED MILK WERE TOTALLY IMPOSSIBLE TO REMOVE. I READ IF YOU PUT THE MOLD IN THE FREEZER FOR 10 MINUTES IT WILL LOOSEN THEM. TRIED THAT..NO LUCK. I HAVE NO IDEA WHAT THE TRICK IS. PERHAPS NORDICWARE SHOULD ADVISE THE CUSTOMER OF HELPFUL HINTS ALONG WITH THE RECIPES.
