  1. the cookie sheets were on back order and took a long time to come in, I don't know if I got the same product that everyone else got, but each time I tried to bake cookies on them, the cookies would burn on the bottom in only 2 minutes at 350 degrees. (after 3 attempts, I gave up, this never happens with any other cookie sheets) Will never use them again, big disappointment.


  2. My old pans got a little rusty round the edges and the non-stick on these new ones still works.


  3. I got exactly what I expected. Great for cookies but do not use metal utinsils for removing food from these pans as it will ruin the surface of the baking sheet.

  1. I received two of these pans as part of a wedding gift two months ago. They're sturdy, durable, easy to clean (they'll survive almost any chemical or scraper), and even after forgetting them in a sink of water they still don't have any rust spots. I haven't had any problems.


  2. This pan has a feature of which I make great use. A magnet sticks to it. I hang them for easy access and they look great, like art work, can use them as a mirror. They surely shine. I bought many.


  3. The construction is pretty flimsy and the pan buckled when I put it in the oven (350 degrees). Pay a couple bucks extra and get a better quality pan.


  4. with this pan. It is moderately priced and to my non-expert eye, well made. It did warp a bit when I used it in a 425 degree oven, but that is not really a problem for me. I am not sure what the sticky problem is the other reviewers are talking about. This pan had a full size label on it but it peeled right off with no residue. However a Norpro cookie sheet I bought a month previous to this jelly roll pan did have sticky gunk left from the label on the cooking surface, but I just followed the advice of the other reviewers and used a little wd40 waited a bit and then it washed right off.

    I am trying to replace all the beat up and "nonstick" cook and bake ware in my house with stainless steel and glass.(I just cannot believe all that flaking Teflon that gets cooked and baked into the food is harmless.) I cannot afford the expensive, heavy, professional stainless bake ware and I feel that Norpro provides an affordable, durable, and I think, attractive alternative.


  5. It looks very nice, fit in all my stainless steel cookware. the only thing is that it warps in over 400 degree oven, but for lower temp it works very good. Plus it makes a nice platter to marinade ot prep meat or veges. Good deal for the price.

However, when I separated the two, the pan on the bottom was dented on the two long sides. Consequently, when I use it, if there is any liquid, it pools. Guess I should have just gone to a store and avoided shipping.

  4. I really, really would love to give these baking sheets five stars; after all, I have used Chicago Metallic baking products for years and absolutely love them. However, I recently ordered this set of two jelly roll pans and was a bit surprised upon seeing them. They did not appear to be of quite the same quality as the old jelly roll pan I have. The rolled edges were not as completely rolled over and tucked under as the edges on the old one. The corners were different too. Finally, the pans did not seem nearly so "heavy-duty" to me. I remember when I got the first pan - probably back in 2001 or 2002 - and I was very impressed, as other reviewers have noted, with how substantial the pan was. I wonder if I would have been as impressed if these pans had come instead.

    At any rate, a thought came to my mind as I looked the new pans over. Were these made in China? So I took the label off and, sure enough, there in small print at the bottom, were the words, "Made in China." I can't say how disappointed I was! I actually still had the label from the original pan in my file cabinet and it said no such thing. In fact, it lists Chicago Metallic with the address to their Lake Zurich, IL manufacturing facility which, according to their 2005 catalog that is still on their website, is where their pans are (were) manufactured. The new label says Chicago Metallic, Focus Products Group LLC and a Vernon Hills, IL address, plus the aforementioned "Made in China."

    I will say in fairness that these pans are still likely better than any pan you will buy at Walmart or any other discount store. Also, as a pro, they still offer a 25 year limited warranty. I think that next time, however, I will buy a commercial pan that is still made right here in the U.S.


  5. These jelly roll/sheet pans are extremely well built. They are very heavy and thick, do not warp, and should last a lifetime. They are the highest quality I have found, and I've owned many different brands.

    Be aware though, that they are NOT in any way non-stick, and are hard to keep clean. If you don't mind breaking out the steel wool to keep these in shape, they are excellent - if you are looking for something that's easy maintenance, however, go with non-stick. Of course, none of the non-stick ones will last anywhere near as long, as the teflon finish wears off any cookware after a while.

  1. I am very pleased with my silicone mat. I purchased it mainly for kneading bread dough - the dough hardly sticks to it at all, so I'm able to use less flour for a more tender bread. It washes off easily, too. I don't have any problem with it not staying in place on my counter while kneading dough, and also don't think it is flimsy. Thin, yes, but not flimsy. It is well made and durable.


  2. This mat is wonderful for kneading bread! Large enough, non stick and non skid on the counter. Easy to clean and easy to store. I hope it lasts forever!


  3. This product stays in place while in use, which is the good part. Dough still sticks to it, but the worst part is clean up. It's impossible to clean in the sink and impossible to dry. Towel fibers stick to the surface and clothing fibers and hair and other things you would not expect. Perhaps the best method is to wipe it down with a wet cloth while still on the counter top and leave it there to air dry.


  4. This item is easy to use and easy to clean. I am enjoying it very much. I only wish I had bought one sooner!


  5. Got tired of fighting the dough/pastry on the counter or the kitchen table; got tired of trying to cover the table with butcher paper that would never stay in place. Made the purchase on this item and have used it a lot. Love it! works great, stays in place, helps with sizing your roll-out and clean-up is easy. It rolls up and takes up little room on a shelf or in a drawer. Every cook should have one. And it's tough!

  1. I've had these pans for two months now and I love them!

    I use them several times a week For roasting veggies (at 350 to 425 degress) and broiling (at 500 degrees). Unlike other brands that I've tried, I have absolutely no problem with warping at high temps.

    Clean up is a breeze too. I get all the sticky stuff off with a scotchbrite and then into the dishwasher. Comes out perfect every time.

    I've also used them for cookies. I adjusted my cooking time downward and used parchment. The results were outstanding.

    I gave them 4, rather than five, stars because one of the pans arrived dented. At this price, I think that's not acceptable. Since other reviewers have mentioned the same thing, this is clearly a recurring problem. I don't know if the problem is with Amazon, the manufacturer, or some combination of the two. But it's a problem.

    I will buy this brand again.


  2. I really like my pans and rack. I use them alot! One of my pans arrived with sharp dent it in. I was quite bummed about that. Other than that I am very happy.


  3. I was looking to buy an additional half sheet pan and cooling rack. This combo suited me to a t. I wouldn't use it for cookies because it's too dark and retains too much heat for the light, chewy cookies I prefer, but this pan is perfect for much of my other baking.


  4. I just dried my hands off after washing one of these pans. I realized it was time to write a review. Earlier, I roasted a whole chicken directly on the pan. Chicken came out great. I was a bit concerned that I would ruin this pan. So many other pans never quite came clean after roasting. The oils would interact somehow with the nonstick coating and create a sticky glue. Not so with this pan. It came clean with the scouring side of a sponge and soap. It looks like new! This pan conducts heat great and is sturdy. It is a great deal- 2 pans and the cooling rack.


  5. Couldn't be more pleased. These baking sheets are good size, don't warp in oven heat and do what they are supposed to do. After years of using a variety of lighter, supposedly non-stick cookie sheets, I was delighted to find these. They are heavy enough not to warp and that can be cleaned easily without a hard-to-identify coating that adds nothing to value. Will look to Chicago Metallic when I need bakeware.

  1. Perfect size for my oven, which is smaller than the norm. The pan looks great, cleans up easily and except for a tendency to warp at higher temps this is a very good buy. And the warping is not half as bad as my old aluminum cookie sheet which would crowd stuff at one end and which would warp at even fairly low temps. I am eminently satisfied with this pan and with the price.


  2. I'm in the process of replacing all my old beat up pans with Pyrex or stainless steel, and using this pan really motivates me to hurry up and get the entire collection.

    The durable thickness of this pan makes baked goods turn out beautifully--without being too heavy or unwieldy. It's big enough to hold a decent amount of cookies/biscuits and small enough to slide next to another pan on the center oven rack. (I can't wait to have 2!)

    It's easy to clean and virtually non-stick. (I generally use parchment paper on the bottom of my baking pans, but any of my spills have easily been remedied.)

    Like other users, I've noticed a couple odd things about the packaging.

    1) The glue on the label. (Why use glue at all, as the pan is sealed in plastic before purchase?) The glue is not at all like that rubbery, easily removable stuff some companies use. This doesn't take away from the functional aspects of the pan, but can leave a mark on the shiny finish if you're not careful.

    2) Advertising on the label that reads "Can be used as a jelly roll pan." Not so much really. The pan's open edges make it easy to slide cookies or biscuits off onto a plate and works great for heat circulation, but wouldn't hold a jelly roll. It makes me wonder if Norpro just uses the same label for both pans.

    Otherwise this is a great pan, especially for the cost, and will last for years to come!


  3. Haven't used them yet but I can twist them a little already without too much effort -- 1/2 inch at most, maybe less. Hopefully that is all that will happen when they are in the oven. Agree with another reviewer -- they have the wrong label on them that says "can also be used as a jellyroll pan" unless there is a jellyroll batter I don't know about that doesn't spread too much and need edges around the pan. Glad I only paid seven bucks for each one.


  4. A friend gave me three of her mother's stainless steel cookie sheets and I was looking to purchase a fourth. Boy, was I happy to find this! The three vintage stainless steel cookie sheets I inherited are probably around 50 years old, and look as good as this new one, which is exactly the same size and shape. When I received the older ones, all it took was a few minutes with a Brillo pad, and they were as shiny as new. I couldn't tell them apart from the new sheet. Of course, for those who don't want to expend a little elbow grease, a little oven cleaner does a great job, too.

    Stainless steel is easy to clean and lasts forever. It makes sense to purchase things that will last and last, and not need replacement every few years. I'm sure I'll be passing these onto my daughters for the next five decades of use.


  5. I was happy to find this item because I couldn't find stainless cookie sheets at any of the retail stores I patronize. No more obnoxious fumes from baking with non-stick pans. These cookie sheets work well for me because my oven is small, and the 12"x15" size allows room around the sides for heat circulation. Because my old cookie sheets had higher edges all around, I had to adjust to gripping these cookie sheets tighter. As for the glue the manufacturer used to adhere the brand name/recipe page to the cookie sheet, I was successful using WD-40. I sprayed a bit of WD-40 on a paper towel, wiped the glue residue off and washed the cookie sheets before use.

  1. This is a wonderful baking sheet - affordable, insulated, nonstick, and large.... however, the one draw back is that it does scratch or nick easy... The surface is pretty good with metal spatulas, but the sides of the sheet (for some reason) scratch real easy. Otherwise, this is a pretty good product for the price. Less than 10 bucks on Amazon is cheaper than any store that I have seen it at.


  2. I've been an amateur baker for many years now and these sheets are good to work with. I'm not sure why anyone would pay more money for more expensive cookie sheets.

    Non-stick surface is good, but make sure you don't use metal utensils on them, they will scratch, then rust. They clean up easily and hold up well.

    I have noticed you have to extend your cooking time (with cookies) a good 10% to 20% longer to get the bottoms of the cookies to just right.


  3. This is the first air cookie sheet that I have had that can be put in the dishwasher which is a lifesaver if it is a real mess. It is also more sturdy that many I have had in the past. So far it's worked perfectly.


  4. This was a Christmas gift for my daughter. She got one last year and loved it and wanted another one.


  5. I used this cookie sheet repeatedly for over 8 hours straight and had no problems. It bakes everything very evenly without any burnt edges or bottoms on my cookies. This is a very good sheet. I use a silicone pad on top of it because I don't want it to get discolored and I don't want to scrub the nonstick finish off to clean it, which is what happened over the years that I had my last Baker's Secret sheets that I bought these to replace. Those last sheets lasted about 10 years before I replaced them, and it is a testament to the quality that I bought the same kind again. They work great!

  1. I purchased this for the fantastic reviews. Also I thought non toxic non stick surface is good. However this pan is not so great as non stick pan, things still sticks. The instruction for the pan says not to use abrasive pads or cleansers when cleaning.

    So every time when I use this pan, I have to soak the pan in water so I can use non-abrasuve pads to clean effectively (still can not get lid of burn mark stuck to the pan.). Wich is not good because, my sink is not big enough to do so. It's annyoing to keep pan filled with soapy water flating top of sink, because it makes hard to use the sink. After the careful care, the coating of the pan still get scratched.

    My brother is professional cook and he has simple metal pans, which is much easier to use. I can just use it, scrub wash it and put it away.

    Also I realized to use non stick pan, I still have use silicon, or plastic spatula. It's doesn't feel right to buy plastic version of what I have already.

    After all, idea of non stick coated stuff is making my life bit more complicated. So here I learned a lesson: Keep it simple avoid non stick coated products. Get simple silicon mat for non stick surface & spend money on good commercial quality metal pan, and not worry about getting new pan for long time or possibly rest of my life.


  2. The three sizes are perfect and it really is non-stick! Excellent value for the money!


  3. We cooked potatoes on the medium pan and they did not stick they came out beautiful and on the large sheet we cooked cookies and they didn't stick but they did stain. WE have not used the little one yet, but we would buy them again


  4. I was excited to try silicon nonstick on a pan, since I'd had good luck with silicon sheets in the past. Unfortunately, it comes off easier that a standard nonstick, and all my pans are already scratched up, despite being terribly careful with them. Now I'm only using them to sun-dry stuff.


  5. This is a replacement set for an old set that I'd had for about 10 years! Baker's Secret pans are great to work with, their non-stick surface is excellent, and very easy to clean up when done. I've made a few dozen cookies in these pans already and nothing has stuck to them. I'm very pleased.

5 comments about Norpro 18-Inch by 12--Inch Heavy Gauge Aluminum Jelly Roll Pan.

  1. We've used these jelly roll pans for 6 months now. We frequently roast vegetables (400-450F with olive oil & salt), bake 10 lbs of chicken thighs at once, and bake bacon (400F). I also bake cookies but always use parchment paper on the sheet. Clean up has been easier than our previous calphalon non-stick pans and no worries about the higher temperatures and non-stick surfaces. If warm water, soap and a nylon scrubbie doesn't clean the pan well enough, use a little barkeeper's friend on a damp cloth. In 6 months, I've only had to do this 3 times -- each time when I've let the pan sit for several hours and the baked on residue turned to something akin to concrete.

    The pans, a second best choice recommended by Cook's Illustrated, are a really nice weight. They have warped a small amount but less than any other pan I've ever had. The only irritating feature is the rolled edge which holds dishwater. I've learned to turn the pan diagonally and let the water drain before removing it from the sink.


  2. I was looking for a pan where i could bake cookies and also heat up stuff without it burning. These do exactly that. Every batch of cookies i have made have come out perfect. Also, i have used them as high as 450 and they have not warped.


  3. Very Large baking pan. I've alway liked aluminum pans, and these are worth the extra couple of dollars more than the "non-stick" pans that start to rust after several months of heavy use. The pans are a very thick aluminum and very sturdy. They are big enough to hold anything, clean up easily, and if anything does get baked on, I can scrub as hard as I want wituout damaging them.

    Definitely the best general purpose baking pans that I own, but I also have a nice set of aluminum air-bake pans for cookies.


  4. This pan was rated #2 by Cook's Illustrated (the #1 pan not being available any longer, probably thanks to Cook's Illustrated) -- but it's great! It's hefty, doesn't warp, browns evenly, and was a bargain. I'm glad I ordered two. Highly recommended.


  5. This was the first non- nonstick pan that I bought and it has converted me. I use this more often than any other pan in my kitchen. If you want to make biscuits or scones and you don't want the bottom to burn, you must use one of these.
