This book delivers, and has now become my go-to for baking. Loads of information and delightful recipes provide lovely results every single time.
Tonight my cold weather bean/vegetable soup supper was lifted out of the ordinary with 'Cornin Around Bread'...so delicious I had to keep myself from going past the second piece. Kris, thank you for the real joy of baking.
- I've made three things out of this book so far and I'm really surprised with it. When I first got the book I was kind of bothered because I had given up on vegan baking books but now I'm very happy to have come across this book. Everything that I've made out of it has tasted wonderful. It's a book worth getting.
- This book is more than full of delicious vegan baking goodness! My friends are constantly trying to steal it off of my table, and the treats are so good! My hardcore non-vegan extended family has no idea I am feeding them cruelty-free snacks! BUY this book NOW!
- This book covers vegan baking in great detail- from traditional basic recipes to innovative and new ones, you are covered. The author is clearly very experienced and explains vegan baking in clear language. This is great for beginners and experienced vegans alike. My favorite thing about this book is that its recipes are ones you go back to again and again. I don't need another banana bread recipe! I don't need another boston creme pie recipe! I'm very happy with everything from this book- simple accessible ingredients and recipes that somehow create results that are far greater and more complex than the sum of their parts. And does it pass the non-vegan test? Yes! My suspiciously non-vegan family devours the things I make from this book.
- I am new to the vegan thing,and even new to baking so I figured this book would aid me in my transition and it has. I have had a few "mistakes" but as a whole the recipes are great especially the pumpkin chocolate chip cookies. A must have in any library.

- Creative, unfussy , freshly informative and comprehensive.
Debra Madison is a natural food chef Goddess! She trained at legendary Chez Panisse with the iconic Alice Waters.
Can you tell I'm in awe??? She lived at the San Francisco Zen Center and was a primary starting force at their Greens Restaurant there. The restaurant is a gastronomical treat and the whole concept should definitely be experienced when in San Franisco.
This cookbook should be a standard textbook for veg cooking. The info and organization is fantastic. It's actually alphabetical , why do I love that? Again, buy it in hardback, it's a real keeper. On my wish list will be her newer books as well . Bon Appetit!
- This cookbook covers the spectrum of recipes from salad dressings to desserts, breads, pizza, soups and stews, and every vegetable that most people can find in the grocery store. This is my favorite cookbook. Although I gave up the vegetarian lifestyle several years ago, I use this cookbook every week. I love to cook and Deborah makes recipes easy to follow and pretty fast to make, although prepping vegetables takes up most of the cook time.I am a cookbook junkie and own an embarrassing amount of cookbooks, but if I was limited to only one cookbook, it would be Vegetarian Cooking for Everyone.
- I have owned this book for many years now. My nephew has decided to become a vegetarian while in college so, I purchased this for him on his birthday. He too loves this book. I can honestly say that I have never made a bad recipe from this book. The information and directions are very clear and precise. This is a must have in everyone's kitchen. It's not just for vegetarians, it's for people who love honest to goodness food.
- I was surprised by how comprehensive this book is. It starts with basic information, such as how to cut vegetables. Of course, most of the book, however, is recipes. Again, I was surprised by how many diverse recipes were contained in the book. It includes sections on appetizers, salads, sandwiches, vegetables, pastas, breads, breakfast, and desserts (this is not necessarily a comprehensive list). I've only tried a few recipes so far, but all have been really good.
I think the title really says a lot. This book is for everyone. I'm not a vegetarian, but I want to have a lot of vegetables in my diet, so it's great for me. Obviously, it would also be great for vegetarians. Not all of the recipes are vegan, but I'm sure you could find a large number that are vegan in it. It's also great for people with diverse cooking experience. If you're inexperienced at cooking, the first chapter or two would probably be really useful to you. If you're experienced at cooking, you could just start cooking the many recipes in the book.
I would recommend this book to you without reservation.
- I call this cookbook "The Bible."
I've cooked maybe a hundred of the recipes in Vegetarian Cooking for Everyone, for groups of ten to about 150 people.
It never goes wrong.
I love this book.

- I LOVE this cookbook! It is packed full of great information and organized based on how many people you want to feed. None of the recipes are complicated, just delicious. Colleen also includes a ton of other tidbits of information that are great for those of us just getting started on our vegan journeys. This was the perfect addition to my growing cookbook collection.
My favorite part, however, it is that unlike many other cookbooks, it includes the nutritional information! Very helpful for those of us looking to get and/or stay healthy.
I've been making the red lentil artichoke stew several times a month! Yum!
Can't wait for Colleen's next book!
- VegNews Magazine named The Joy of Vegan Baking, Colleen Patrick-Goudreau's first effort, 2007 "Cookbook of the Year." With The Vegan Table, it's obvious Patrick-Goudreau is neither a one-hit wonder nor suffering from a sophomore slump. The Vegan Table is stunning in every detail: concept, photography, design, and, of course, recipes. "I am an entertaining maniac," she boasts, which just might be the understatement of the year. Throughout, Patrick-Goudreau offers advice on entertaining, chef's tips, and veg-food trivia. She also pairs her recipes with a brief nutritional analysis. Table would be an enjoyable read even for non-cooks. It is a classic, a beautiful work of art. Any book that states "Eating more of my desserts will make you healthier" deserves attention, don't you think?
- This a gem of a cookbook, perfect for entertaining guests as well as feeding your family. So many books aren't really substantial fare for vegans. This one has a wealth and variety of recipes. We intend to make good use of it.
- I am a big fan of the author, Colleen Patrick-Goudreau, and was not disappointed with the purchase of this cookbook. There is a wide selection of yummy recipes to try as well as Colleen's commentaries which I have found very useful as a new vegan. I'm so grateful for the choice of veganism and Colleen has made the transition to vegan eating very, very simple yet extremely satisfying.
- Being new to veganism, I got a little purchase-happy with a ton of new vegan cookbooks. A few have been disappointing, but they were well worth it for eventually guiding me towards this book! First of all, the book itself is beautiful, and I love everything down to the texture of the pages! There are pictures for almost every recipe in the book (of the finished product, of course), and the set-up of the book is new and refreshing! The author separates the recipes based on what sort of company you'd be entertaining -- whether it's for you and that "special someone," casual get-togethers, parties, formal occasions, et cetera. She also has the recipes further separated by what kind of dish it is (appetizer, main course, dessert) and what time of year to have it! The book is filled with informational tidbits -- food history, "did you know"'s, cooking tips, decorating tips (for the occasion), and other things like that. There are even recipes for vegan tea parties!
My family and I tried the panini and herbed scalloped potatoes -- the panini looked just like the picture in the book, and my family (who is definitely NOT vegan -- they love their meat!) said it was absolutely amazing and that they would do nothing to change it -- not even add any cheese! Of the dishes I've made so far, those two are my favorite :). Flavorful, delicious, generally easy recipes to follow in this book! (p.s. She even tells you how to improvise if you don't have the correct cooking materials -- genius!)
My new favorite cookbook, for sure!

Many reviewers have hailed the excellent variety of vegetarian menus in this book. What really surprised me was some of the unusual and creative techniques for using a slow cooker for things like bread and desserts. These more esoteric offerings get a little complicated and require an insertable pot and a very large slow cooker, but they show you ways to use a slow cooker that you might never have imagined.
I think the author unnecessarily limited the scope of this book by providing only slow cooker variations for her recipes. As you put together most recipes in this book, you realize that they could just as easily be baked in an oven, stewed on a cooktop, or simply microwaved instead of slow cooked. Slow cooking serves an important purpose and produces great results, but the author could have highlighted the versatility of her recipes by also including options for baking, microwaving, or stewing them. Occasionally I see a cookbook that provides multiple cooking options; most recipes in this book deserve that kind of showcasing.
One disappointment I had with the book was with the bean recipes. With the exception of lentil and split pea dishes, all the bean recipes called for precooked or canned beans. The author seems to think that you can't cook dry beans and vegetables at the same time. Maybe so, but she should have explained her reason for that somewhere in her text.
Overall, this is an excellent collection of vegetarian recipes. But don't make the mistake of thinking these recipes are just for your slow cooker - these recipes are much more versatile than that and can be cooked in a variety of ways.

- The Onion soup is wonderful. I just made it for Saturday lunch, cooking the onions as directed all night Friday night. It works, and it couldn't have been better. My sister is visiting and she said it was as good as the soup in France. A lot easier and cheaper, too. Can't wait to try more.
- I've made a wide variety of these recipes since I got the book a few months ago--I'm addicted! (I particularly recommend the No Hurry Vegetable Curry and Vindaloo Vegetables.) It's worth noting that most of these recipes are low-sodium as well as healthy and delicious. As someone on a low-sodium diet, this book is a godsend. It is not advertised in the book, but almost all of the recipes are (or can be) made using virtually no sodium. The main source of possible salt is canned beans, but there are instructions in the book for how to cook dry beans. Not only are home-cooked beans sodium-free, they are notably cheaper than canned ones. Soups often call for vegetable stock, but you can find very low sodium versions of these if you look around. Even when recipes rarely call for soy sauce or other salt-heavy ingredients, it's almost always a very small quantity, which is quite negligible when divided among the multiple servings that the slow cooker yields. Recipes often call for "salt to taste," but you can omit this (as I do) or use a salt-substitute. Otherwise, you're just cooking with naturally sodium free vegetables and spices.
The best part is that you don't even miss the salt in these recipes. Given the long cooking time and the wonderful combinations of tangy spices and fresh vegetables, meals come out delicious and salt-free everytime.
- This cookbook has two huge problems. One, the cooking times have NOTHING to do with reality, unless you want your food so overcooked it's like baby food mush. I might be willing to live with that (though why would I buy a slow cooker cook book if I wanted to do all the experimenting myself to figure out how long things should cook?) But the second problem is that the recipes really aren't very good; there's been nothing so far that I would make a second time, let alone enough times to really figure out the correct cooking time.
I've tried five or six recipes and I keep thinking I should try more but I just can't make myself. Some of the leftovers of what I did make went in the garbage, some of them we managed to finish but with no gusto, so it's not very encouraging.
Also, a LOT of the recipes have multiple steps, dirtying plenty of pots and dishes than just your slow cooker. So, even if the times were right, these really aren't recipes to throw in the cooker in the morning and come home to at night.
- I recieved this book for Christmas and was thrilled to get it. I returned to being a vegetarian just over a year ago and when I still ate meat I would use my crock-pot atleast weekly. Since going to the dark side, my crock-pot was collecting dust because I wasn't exactly sure what to cook in it. This cook book solved many of those questions. I have made the blackbean soup, chicken potpie, and several other recipes. The blackbean soup was delicious, not quite the typical Cuban style, but my Cuban husband still loved it. The potpie also came out very tasty. There is a tip in the book to make a drier crust by removing the lid for the last bit of cooking, which I did, and was happy with the outcome. Most of what I have made from this book even fills my meat and potatoes eating husband up with no complaints! There are also many other kinds of recipes in the book besides dinner. There are breakfast foods, sides, desserts, and drinks. The drink part could have been left off, b/c really and truly what drink isn't vegetarian? None the less, I still gave the book 5 stars because of the in depth recipes in the remainder of the book.

- This is the first 'cookbook' I've bought for my Kindle and it really doesn't work well in this format. I love the book and have ordered it in the 'dead tree' edition. Meanwhile, I'll muddle through with the Kindle version. This afternoon, I'm going to try making the Sunflower Herb Pate, which the author suggests I serve in stuffed mushrooms (p.118) or stuffed bell peppers (p.121). Um. I'm at location 448-51. And I wish I'd highlighted the chart that tells me how long to soak each type of seed, but I didn't, and now I can't find it without scrolling through all the 'pages' I read last night. This will be the last cookbook I buy on my Kindle. However - this particular book looks like it will be a favorite in the paper version. (ps, I rated this book a 5 star for content, but I rate the Kindle version a 2)
- So far I've only made the spaghetti and no meat balls. I must say...it was very delicious. I was quite surprised at how tasty it was.
- I am very new to raw food eating and so far the books I have found have been full of strange, hard to eat and hard to prepare foods. I have really enjoyed this book so far - I have already made about six of the recipes and all of them have been delicious (my husband loves them too). It also has great tips on how to make things like cabbage and brocolli easier to eat raw plus heaps of yummy deserts - none of which are boring at all! And I've appreciated not having to buy all kinds of hard to get ingredients or appliances - especially as I live in a small town with limited fresh grocery shops!!

- I am a cookbook collector and love to cook. I recently became interested in vegetarian cooking. This cookbook is one of the best cookbooks I have come across. The recipes are easy to follow, do not use exotic ingredients, and have several variations. In fact, the author encourages you to try your own variations. If I had to limit myself to one cookbook, this would probably be it. There are a lot of basic cooking facts and tips in this book.
- I think this book will become my favorite resource for how to cook just about everything vegetarian. I have found that I use it primarily when I need to know how long to soak a particular bean, what to do with a grain, how long to let a favorite bread rise. I find the basic instruction helpful. My favorite recipes are the sauces and breads.
This book is not for complex vegetarian dishes but is a good "eveything" starter book.
- I purchased multiple copies of this book three christmases ago based on the wonderful reviews; one for me, one for my sister and one for my best friend. My sister and I are long time vegetarians (18 years), and my best friend wanted to learn more aobut vegetarian cooking. I was very excited to expand my cooking reportoire with new recipes, and all of the reviews sounded so good!! But from the first, I was sorely dissappointed. Most of the recipes are so bland as to be flavourless. The ratatouille I wanted very much to like, but I just couldn't... it was such a bitter dish. My boyfriend who is a meat lover very diligently tried the receipes with me as I am trying to get him to eat more healthily. Bless his heart because miserably ate his way through the recipes alongside me on many occasions, and I can tell you, if I couldn't make my way through a meal happily, he most definitely couldn't. The information provided on th different vegetables and grains and what utensils to use in the kitchen is easy to read and is absolutely right, but for a vegetarian who cooks often, it was unnecessary, although there were a few tidbits that I hadn't known. After my dreary attempts at cooking my way through the bok I called my sister and my best friend. y sister told me she'd taken it down to the second hand book shop about three months after Christmas because she tried about 15 recipes, and each one was worst than the last. My best friend, well she smiled politely and said she was glad thatI also found the recipes to be bland. after trying a few, she'd regulated it to the dusty corner of unused cookbooks. Although, on a positive note, she said that she does pull it out for ideas every once in awhile.
- What I like most about this book is it is not filled with glossy pictures. I am an amatuer cook, so the 'great pictures are intimidating. it is easy to read and the author offers options and alternatives, plus substitutions.
- I bought this book based on reviews from this site thinking that it would be a great addition to my cookbook collection. I was sadly disappointed. The first thing that I realized was that I found the layout to be frustrating. Secondly, I was really hoping to find fresh, HEALTHY veggie dishes. Unfortunately, as I flipped through the book, I began to see several dishes that I would never make because of their ingredients. I try to really hard to stay close to whole, simple foods - and this just didn't cut it for me. I'm sending it back tomorrow.
With all that being said, I think that anyone who is looking to entertain would love this book. Many of the recipes seemed intimidating, but sound as if they would be very impressive for a crowd. If your looking for a go to book for vegetable dishes that will "wow" people, I think that you will be pleased.

- I guess I'm a rare vegetarian that doesn't like to eat Tempeh or Seitan and not much tofu. If you are like me then this may not be the perfect cookbook for you because there are LOTS of recipes focusing on these items. However, I just leave these items out and improvise. Some recipes have a lot of ingredients and are a little tedious but they turn out freaking amazing! MOUTH WATERING! Would recommend to add to your collection of veg cookbooks!
- This book continues to amaze me! Everything in there is SO delicious. It has really expanded my palate and exposed me to new types of food. Vegan, vegetarian, or omnivore, you should buy this book and enjoy the fantastic recipes it contains.
- I adore this cookbook so much that I'm starting to buy copies as gifts for all of my friends. I have made so many recipes from the book, and they have almost all been excellent (I didn't really care for the beanballs). The other night I made Spicy Tempeh and Broccoli Rabe with Rotelle, and it got devoured by my entire family. I made lasagna using the cashew ricotta recipe, and it tasted like it was from a gourmet restaurant (even my non-veg father thought so). I find that her baking recipes are better than anything in other vegan cookbooks as well. I just need Isa Chandra Moskowitz and Terry Hope Romero, and I can be a content, well-fed vegan for years :)
- This is my vegan cooking bible. I am obsessed with the vegan caesar salad. My husband says that the pumpkin crumb cake is the greatest thing he ever ate. And the sushi! Who would think to put tempeh and veganaise in sushi? Isa, of course, because she's a genius. This book is a treasure, and a must for every vegan who loves to cook.

5 comments about The Conscious Cook: Delicious Meatless Recipes That Will Change the Way You Eat.
- First off let me state that I am not vegitarian or vegan. I bought this book to because I was tired of the same bland vegetables as sides and needed a tastier way to incorporate them into my family of five's diet. I would only reccomend this book if you really enjoy cooking and have enough skill to improvise on the fly.
My eldest son and I are the only ones who will eat asparagus. I made the soup on page 97 (first time I ever made soup from scratch!) with the cashew cream and my entire family liked it. I could not find cheap vegetable bouillon so I bought Better Than Bouillon brand chicken bouillon (real chicken, there was no vegetable) and substituted 1 tablespoon of bacon grease for 1 tablespoon of olive oil. I could not find any microgreens to garnish the soup. Not only is it amazing that my entire family likes it but it was very creamy. The cashew cream exceeded my expectations. The book says this makes 6 servings but it's more like 15.
I will be making the chicken scaloppini on page 155 next. Several issues with the recipe so far without even having made it. I can not find packaged cooked Udon noodles anywhere (can't find a good asian market) so I have to make them myself from dried noodles and worry they won't be packed tight enough for this recipe. I found gardein "chicken" at fresh and easy (whole foods is a drive) but it is very expensive for a family of five and they were all preseasoned (wet). If they sell plain faux chicken I haven't seen any. None of the seasonings would be a match for this recipe but since I eat chicken I'll just use the real thing. The recipe calls for 1 pound of shiitake mushrooms, this is for four servings and each entree of chicken has about 5 mushroom pieces on it so it is more like 4-6 ounces not 16 for the entire recipe. I could not find pea shoots so I will be substituting spinach.
Again, if you already have some skills in the kitchen you can deal with the errors and lack of access to the ingrediants, if you are a novice you will be wondering why you are putting 4 ounces of mushrooms on top of 7 ounces of "chicken".
I can't wait to try the cashew cheese!
**EDIT**
I just went to the gardein website and they reccomend two different types of "chicken" to use. One of which is "chicken" scaloppini in the frozen food area. I did not check the frozen foods, I thought all gardein products were fresh for some reason. The chicken appears to be 2.5 ounces (the noodles are 7 ounces before cutting) and everywhere you see his recipe it asks for 1 pound of shiitake mushrooms, that seems way too much but I'll confirm after I cook it with the 6 ounces I bought. 6.5 ounces total (4 ounces mushrooms and 2.5 ounces "chicken") does seem to be a good amount for the "meat" course but it sure looks like more "chicken" than mushrooms in the pictures I wasn't going to spend $18 + on mushrooms.
- I saw this book last week as one of only 4 vegan books that a major book chain had (only 4 vegan cookbooks, and that in California?) and being very visual, I loved that it actually had pictures for every dish. I sat on the floor and looked everything and my mouth started watering. But I ordered the book through Amazon (price was better) ;-).
I'm a 2.5 months vegan and love to cook. Having ordered about a dozen vegan cookbooks in that time, I tend to be disappointed, that most don't have many pictures. maybe I'm strange (well, ok I am ;-) ), but seeing pictures makes a big difference to me. I just don't enjoy the recipes that much, if I don't see a great presentation of the finished products.
Anyway, having received it yesterday I can't wait to start cooking with this. While the recipes are probably not your every day meals, they are certainly comparable to high end gourmet dishes. I love the ingredients, the presentation. I go to a lot of potlucks and really enjoy putting some effort into the preparation and have people be amazed at the kind of vegan dishes that are possible, other than salads and basic veggies.
In between having seen the pictures in the book and receiving it, I had already used the little 'beggars purses' idea that is on page 46 with a garbanzo bean roast recipe that I've made before. People at the potluck loved it.
While this book is probably not for the person that doesn't enjoy cooking, I think it is perfect for those, like me, that are emotional eaters and who's
taste buds need to be happy, and who enjoy cooking and making unique dishes. These recipes would certainly impress meat eaters out there.

update: In the past 3 days I cooked the tomato bisque, corn chowder and celery root soup (was that the name?). They are all awesome and I have made portions, that I put into the freezer. My favorite is the corn chowder, with the tomato bisque following. All the recipes were very easy to follow.
- This book is great! The recipes are ..intricate and definitely not for beginners, but..they are absolutely fantastic.
I was going to make the fingerling potatoes, tomato bisque, all green salad and pepper crusted portobella entree (with mashed potatoes) as a surprise for Valentines day. It didn't work out that way, so my boyfriend and I cooked it together. We ended up making it in pieces, spanning three days. The food came out amazing! I'm happy I didn't try it on my own all at once, because I think it would have been overwhelming, but you definitely feel that the end result is worth the work.
My extremely omnivorous boyfriend was thrilled with everything, he took leftovers to work and refused to share!

- This is a cookbook for serious cooks. The recipes are excellent and the dishes will impress the most discriminating palate, vegan or not. It is a cookbook that I use when I have lots of time, as the preparation is more involved than in an average recipe. I do like the pictures and tips the book provides. I am happy that I purchased the book and would recommend it to others.

- This is the first time I am being serious about going vegan and their are a few things I was worried about: Where am I going to get my protein and calcium from? What is seitan? What can I use to substitute ingredients like egg and butter? I don't need any added stress, how inconvenient is this going to be? This book has a section dedicated to answering these questions and more and has recipes that don't look intimidating or time consuming (vegan tacos, vegan "tuna sandwiches, vegan "meatloaf", even "buffalo wings"!). The book also addresses the issue that you don't have to use meat substitutes all of the time to have a complete meal and there are products that can be used in place of a protein besides tofu. I recommend this book for someone who is a beginner or someone who wants to eat vegan foods without missing out on foods they may be accustomed to.
I tried the quick and easy vegetable casserole recipe on my meat-eating fiancée right after I got the book, using some basic ingredients I already had in my house (except for the couscous that I sub-ed with brown rice), paired it with a side salad and he ate half the casserole (aka he really liked it)! I have a feeling this book is going to be a tremendous aid in becoming a vegan.
- This was an impulse purchase. I have made about half a dozen recipes from this book. My stew wasn't spectacular but I will blame that more on my unwillingness to leave a crock pot alone. The mac and cheese is brilliant. So much so I have made it twice. I try to not eat too much soy, and the fact that this recipe has no "milks" or cheeses" in it and is still creamy and rich is fabulous.
I will definitely be exploring this book further.
- My mom got one copy of this book for herself, and one for me. She just gave it to me, and I've already read through it entirely in one sitting. Cookbook lovers tend to do that. But I found myself reading the parts I usually skip in vegan cookbooks, like: stocking your pantry, vegan basics, cooking techniques, etc. I really like Alicia's writing style. She seems extremely down to earth and honest. She doesn't come across as a know-it-all. The book is cute and easy to follow, and thus far, I'm liking the recipes!
- I love this book. I have consistently cooked from it for a couple months now and haven't come across a bad recipe yet. I was skeptical about some of them and they passed the test. My family has enjoyed everything, too. That's a hard sell when you've got ages 49-4 all around the same table. The mac & cheeze is terrific. I loved the wraps, too. The mushroom gravy & alfredo sauce recipies are worth the price of the book alone! If you're on the road to being vegan but don't want to be hungry or deprived, this is a winner. It's also good for feeding non-vegans because they simply will enjoy the food w/o noticing it's animal-free. I appreciate that the recipes are reasonable in the prep time, especially when cooking day after day for a family. This is not a fat-free vegan book, beware.
- After receiving the book I glanced through and tried a couple of recipes and they were great. Glad I purchased the book. My husband and I are just starting the step to Vegan.
