  1. I'm not a great cook but I thought I knew how to make nachos. Boy, was I wrong! The recipes in this book take nachos to levels I never dreamed of. Now I can make them not just as a snack but as a full meal. Even my girlfriend wonders where I suddenly learned how to cook.

    If you want to salivate, buy this book just for the photos.



  2. I own thousands of cookbooks, and this is one of the better one topic books I have run across. All the recipes are easily prepared with easy to find ingredients, and of the 10-12 I have made so far, all have been very tasty. This book will get you out of the typical beef and bean type nachos and into a new world of taste. A lot of the combinations also make excellent pizzas.

  1. I bought this book as a birthday present for a friend of mine. She's majoring in spanish and intends to teach english as a 2nd language to spanish students.
    She enjoyed the book a lot. Said she had never seen a book like it, with both languages side by side and also a kind of cook book. She took it to some of her spanish teachers and others in class and they all liked it.
    I thought it was a really neat idea, very unique. It would be good for someone interested in both languages, or good salsa!


  2. Secrets of Salsa has provided an infusion of healthy, delicious, and colorful salsas in my family's life. These recipes, which had never previously been written down, came from Mexican women who have moved to the United States and were attending English classes. The vignettes about the women are delightful and the fact that all the proceeds directly benefit adult literacy add to the value of the book.

I have a passion for authentic regional quisine, so often when we eat out, what you get served under the name of "Mexican", "Chinese" or whatever does not bear much resemblance to the actual cuisine eaten in those countries. Here in Australia, most Mex is just heaps of meat, tasteless beans and stale salad drowned in too-salty salsa and tonnes of cheese! Very heavy and fatty.
    Compared to that scenario, Jane Milton's "Practical Encyclopedia of Mexican Cooking" is a revelation! There are plenty of easy to follow, simple recipes with great photos (so you can tell if your result looks anything like it should). The recipes are also very diverse and represent the broad range of exciting flavours that are Mexican Cuisine.
    I have so far tried many of the recipes in this book and have had very enthusiastic responses from dinner guests, surprised at the lightness, freshness and subtle variety of flavours that are part of authentic Mex.
    There are lots of hot, cold and alcoholic drink recipes as well to round out your feast.
    The part I love most about this book is all the historical information about recipes and foods and how all of that relates to the history of the country itself. For example, I did not know that chocolate originated in Mexico and was taken back to Europe by visitors, or that the Germans introduced the art of beer-making to the country.
    The glossary of ingredients if fabulous also, and includes similar historical/ background info.
    In summary, this book is very comprhensive, very authentic, thorough and easy to use on a day-today basis!
    You may find, as I have, that many of your other cookbooks get dusty on the shelf as you explore the delights of Jane Milton's "Practical Encyclopedia of Mexican Cooking"!!

  1. I have lots of cookbooks focused on various kinds of Mexican cooking (Tex-Mex, New-Mex, Cal-Mex, Mex-Mex) but this is one I come back to all the time for dependable, easy and tasty stand-by recipes. Especially noteworthy are the instructions for delicious pinto beans, Chicken Mole Enchiladas, and chili.


  2. I've owned this book for 6 years then loaned it to a friend. Now I'm ordering another. If you don't know the pleasure of chipotles (smoked jalepenos) this book will tell you all and much more. Very informative, good recipes but no lengthy dissertation. This lady knows her reds and greens and will bring a tear of joy to your eye if you need it.


  3. This is a great cook book. The sauces and salsas are all perfect and most of them are quite easy. I use this more than almost any other cookbook that I own.
