  1. The riddles and Versitos Para Ninos are a delightful touch that adds to the great down home recipes. It offers the reader a trip down memory lane for those famaliar with Spanish and Mexican everyday life and a peak at another culture for those who are not. It is a great gift as well as one to own yourself. Enjoy!

  3. My family grew up in South Texas, and it's a good thing or the cookbook would not be very helpful. The recipes are what you would expect from South Texas, however the details needed to prepare these authentic recipes are simply not to be found in this cookbook. I also have the Tex-Mex Cookbook, and the San Antonio Tex Mex Cookbook, and both offer well written recipes which you can duplicate. I would only recomend this cookbook for nostalgic reasons, a much better choice would be the tex-Mex Cookbook, both historically and for the recipes.

    I was turned on to this book by my mother in law, who had this book since I think 1983. There are some really great receipes included. The book I received was in perfect condition...Thanks Amazon....

  2. Being from San Antonio - I was a little sceptical when I checked this out from the library. I don't know about 'Nuevo' as a trend, but the book is a delight and I hadn't had it home for more than an hour or so before I was on Amazon ordering a copy. It is fun to read and fun to cook from and the whole layout of the book is a delight with fine color photographs.

A welcome contribution to the "Mama's Kitchen" series, The Mexican Mama's Kitchen: Authentic Homestyle Recipes combines classic and time-tested home recipes with the motherly tips and advice of an experienced cook, such as "When deseeding chilies, be as careful as possible. Try to wear rubber gloves and avoid rubbing your eyes" and "To make vanilla sugar, add one vanilla pod to 2 cups sugar. Set aside for 3 weeks and then mix. Use to sweeten hot drinks as a sugar alternative." Recipes such as Bricklayer-Style Eggs, Green Rice, Black Burner Beans, Mexican Hot Chocolate and many more are presented not only with methodical instructions, but also a brief introduction describing how the recipe has been used in families for generations. A handful of color photographs illustrate The Mexican Mama's Kitchen, a very highly recommended and easy-to-use family cookbook.


  2. The recipes offered in this cookbook differ quite a bit from most Mexican cookbooks I have seen - rather than focusing on Tex-Mex cooking or on painstakingly authentic regional dishes, this author has a style of cooking that seems more European-influenced. The result is a unique collection of dishes - for example, Beef Tempura with Middle Eastern Sauce, small bites of shredded beef battered and fried, served with a spiced tomato sauce, or Pacholes, thin seasoned meat patties. I have tried several recipes - some of them are quite involved - but the results are worth it, subtly and richly flavored.

    I have taken one star off of my review because of some substitutions the author has offered. I notice that she lived in England, and perhaps as a result of this she lists feta cheese as an ingredient in her recipes - while most Americans can get their hands on authentic Mexican cheeses these days. Similarly, she recommends using canned corn instead of frozen or even fresh.


  3. I really like this cookbook. I collect cookbooks from all over that focus on home cooking and this one is just right. I first took it out of the library and read it through, the pages are so nice, the weight of the paper, they are all four color. After the first reading I was ready to cook, which doesn't always happen. Some books are just better to read. I made enchiladas suizas, refried beans, and mexican rice and all came out great. There is something very nice and friendly about the tone, sometimes you read a cookbook and it feels like the author is trying to impress you with what a priveleged childhood they had. This lady makes you feel like she comes from a really loving family who loves to eat. I don't mind her substitutions, it all seems real.

  4. Take it from someone who has spent time searching for Mexican Cook Books that offer simple authentic Mexican recipies. This book offers anything from the familiar dishes, holiday pastries and breads, to the more exotic dishes. Each recipe includes comments from the author, providing tips and background on history of the recipe. I only wish this book were more accesible.


  5. This is a classic on Mexican cooking, with first and second printings in 1958. Recipes and instructions are succinct, and there is little or no commentary on the dishes or their background.

    I give this 4 stars, as Diana Kennedy's "The Cuisines of Mexico", published in 1972, has become a more definitive source of Mexican recipes. Kennnedy's book also has simple recipes, and also has superb hints on cooking, and gives a wonderful running commentary on the origin of the dishes, and suggestions on how to serve the dish. Kennedy's also has photographs.

    Newer books by Bayless and others have come forth since 1972, however both Zelayeta's and Kennedy's books have stood the test of time.

  1. Great cookbook! The recipes are easy to understand and even better tasting. Mr. Kerr has a flair for setting the mood for each of his recipes with anecdotal descriptions of how to serve and what to serve with the dish. The only drawback is sometimes the recipes call for ingredients that are not easily obtained (common grocery store), but he warns of that in the book! It's a good read and a great cookbook.


  2. I love the Kerr family thinking when it comes to food-- big, blowsy, can't-have-too-much-of-a-good-thing type thinking. I've used this cookbook for five years, and everything I make has great, authentic Tex-Mex taste. I'd take any advice Park Kerr is giving out.


  3. This book is full of great-tasting, well-written recipes. I have been using it for a number of years with consistently good results. There is a useful resources section in the back for getting ingredients you might not be able to locally.


  4. This book has been my bible for entertainment since I bought it at least 7 years ago. I was on business in Austin, Texas and found it in the airport book store, luckily. Homemade salsas, bbq sauces, ointments and marinades, guides to grilling and smoking all kinds of beef, chicken, pork, fish, lamb...how to make sausages, how to make pizza from scratch and cook them on the grill, how to grill sandwhiches...tons of bbq type side dishes...alchoholic and non type drinks, and special deserts. All my most favored recipes have come from this book. Not one thing I have made has been a disspointment and this book has helped me earn the reputation of being one of the best bbq entertainers around.

    My personal favorites:

    spicy lemon chicken
    molasses mop beef ribs
    avocado salsa
    picadillo salsa
    Western Red BBQ sauce
    bbq pizza (make dough from scratch!)
    smoked t bone steaks with green chile butter
    marinaded and grilled mushrooms, red onions, vegetables
    rosemary new potatoes
    grilled sweet potatoe planks
    marinaded red pepper & jalepeno Cole Slaw (no mayonaise!)
    jack daniels pudding cake
    pineapple tequila
    pineapple tequila margaritas
    Grilled peaches with walnut oil on vanilla bean ice cream

    I am going from memory on the titles, but I have captured the essence. If you like to grill, or have an affinity for chips and salsa, smoked meats, spicy foods, beer or tequila..this book will not dissappoint. Even if you don't love all those things you will find killer recipes here. And hey, I don't even know the author (unfortunately) I just love this book.


  5. This is an incredible grilling guide. I've tried multiple recipies and they have all come out on fire with taste, inspiration, and yes, desire for incredible food. DO try it, I highly recommend it.
